As a Thai, i can tell from the look of it that the foods are quite authentic. Many Thai foods have the influence of Chinese food too so the dumplings are called the same as shumai we have no distinguished name for the two. We might just say that it's a Thai version of it. The way that you eat boat noodle is exactly the way that I would eat, extremely hot and spicy but normally I wouldn't put that much chili powder in any other kinds of food other than boat noodle tho. And yes, wide noodles usually goes well with clear soup or stir-fried (we have many types of that too) with this rice noodles would be appropriate.
The first time I tried Thai boat noodle my coworker asked me if I wanted some and I love noodles so I kinda just went for it. I didn't know it was made of blood until another person told me lol. I wasn't scared considering the first time I tried it without questioning and it was delicious

Yes. That's the thing about Thai chili, it is kinda nice, rich and hot and fragrant at first impression, but the heat will keep developing in your mouth more and more and becomes so much stronger when you're already enough of it. And that is when it's really painful because it won't go away and keeps burning.
My mouth wants this so bad.

I have a routine of when eating by myself I watch these videos it makes me feel like I’m sharing a meal with a close friend. 🥰
That's why I love Thai food. It's already spicy and most places that I've been to have heat levels and they'll go up to maybe 5 and I usually ask if they can do at least 10. I've never been let down by the flavor or the spice!
I can only eat blood soup if there is some vinegar in it. I am the same as you with the Black Vinegar too. I noticed in CA though not all restaurants will serve black vinegar at the table. Love your Videos Mike! You are always so natural - I feel I'm skyping with a friend. Good job!
I'm Thai and even though I cannot / have not tasted this dish at that place, I can guarantee you that the flavors are authentic and legit just judging by the way they serve the condiments, that little metal cup for water, the various toppings on your soup, the fact the put fried garlic on your dumplings and that they serve thai milk tea.
"Crunchy garlic" is a popular ingredient here in Thailand, along with pickled garlic. The condiment rack is found at every Thai restaurant. Unfortunately, most of the meatballs you find here in restaurants are frozen pork and have the consistency of rubber and are totally tasteless. Som Tam ( green papaya salad) is one of the most ubiquitous foods you will find here. My favorite meal is Som Tam with Kao Neaw (sticky rice) and Gai Yang (barbecued chicken. I DO have to ask that whoever is making my Som Tam to hold off on the Nam Pla (fish sauce), which the Thais put on almost EVERYTHING. They may love it, but for me it is nasty! No problem with the chillies though!
I don't like fish sauce either. It's just too strong and salty for me.
I used to hate fish sauce but if u mix it w a lil vinegar it’s amazing

Boat noodles is up there with menudo as my favorite soup. If your gonna try it, find a place that makes it with the blood. It's just not the same otherwise. I personally like Lao style papaya salad because it's more funky with shrimp paste and fermented fish sauce

It's normal to get small portions of noodles when ordering boat noodles. That's why some people order up to ten bowls

In Thailand, it's not unusual for people to eat 3 or more small bowls of boat noodles. They are small portions, but only cost the equivalent of $0.50 or less per bowl. That was a relatively JUMBO bowl you had. Really one of Thailand's iconic dishes...

Oh and if you want some hardcore spice. there's a stand that comes to the garlic festival in upstate NY every year and they make the hottest hot sauce in the world. and just one drop causes serious pain. you would love the garlic festival though.

there is a shop that specializes in this dish...it's on the top level of terminal 21 on sukhumvit, bkk. it's f*cking amazing...the customization options are insane, talking wagyu broth and braised wagyu beef or anything you would prefer. the taste is still in my brain and one of the many reason i go back to thailand

I think traditionally the soup would also contain Liver which combined with the blood would include a heavy amount of iron

what I've learned about boat noodles is they're served in large bowls with little soup because the soup would slosh and spill all over the boat and the server and customer

I always opt for clear beef soup instead of the blood based soup becos of the weather. But imo boat noodles beef are a rip off; although they cost 20 to 25 baht a bowl, you'd need a minimum of 10 bowls
