Sharing up my mom's recipe of aam ki launji aka desi jam..... Oil Green cardamom Kacha aam Salt Red chilli powder Pinch of Turmeric Fennel seeds (corsed) Cumin (corsed) Kalonji Little amount of water.. Then cover with lid fir few minutes. Sugar &Jaggery(equal amount) Dry fruits(optional) ... Cook until it thickens.. It goes amazing with paratha,bread... ☺😋😋
In Odisha it is called "Aambo Khatta"... Khatta / Chutney is our staple in everyday lunch... But we don't use Garam Masala.. We use Panchaphuton Or panchphoron and mustard oil and red chili

"Masale daar launji" keri chilke sameet ya without chilka aap ki marzi Onion paste mein garlic, ginger ka paste, haldi,laal mirch, kalonji, soonf,methi dana, namak daal kar mix kr lijiye phir patele mein oil daal kr zeere ka bhagar dein or masala daal dein us mein thora sa Pani bhi daal dein or bhoonein kache pan khatam hone tak, jab masale pe oil aane lage tu keri daal dein mix karein or halki aanch pe pakne ke liye rakh dein 10 to 15 minutes baad check kijie chahein tu beech beech mein bhi check kr sakte hain wo pori chilke sameet gal gai means ready hai

We make similar dish minus the Garam Masala, Chaat Masala and add little Methi seeds in the tadka. In some Maharashtrian households it is called as Methamba. It's a wow substitute for Vegetables, sometimes to be had with Poli(Chapati) & Maharashtrian Doodh-Dahi Bhaat (Curd Rice).
