Just made my first batch thanks to your vid and some obliging squid. The other half told me to wash the jars, and dry them in an oven, 100C to sterilise. Don't use a tea towel. Might make it last longer, but I'm sure it's not going to last long enough to find out.
This is exactly why I came to the comments section. My batch is too "vinegary" and it's killed the flavour of the calamari. I'm going to try this method next time. Thanks!

OK a week in i'm on my last jar and they are still delicious.

I am not sure, I usually eat it within a week or two.
Try half water half vinegar, choose a GOOD quality white or white wine vinegar, and half teaspoon sugar per jar to ease the acidity....
