Craig; Yum! I just finished my first batch! I wanted to experiment with oatflour, so I substituted 2 3/4 all purpose, with a 16oz of gold medal oatflour. It was the perfect amount. They are to die for 😋 🍪 😋🍪
I didn't have butter to bake with so I used Butter Crisco. I also substituted Splenda for the sugar 1:1. My cookies didn't spread like yours and are more of a grainy texture. I really like the match undertones and earthiness of the flavor of the cookie. Next time will definitely use butter but these are OK too...just not chewy. Yes, nuts would compliment in this cookie nicely.
This is on my list! My cat was watching your video, and almost hit the ceiling when you crinkled the parchment. Pistachios ? Would that go with the tea?

Yum, your cookies look pretty ! I grow moringa and use it in cookies and smoothies. It has a peppery green taste and makes a nice earthy color.
