    In Japan we ear fermented food regularly. Also tofu is made with organic beans and is deep fried in sesame oil. I’ve never had this excellent high quality tofu in another country. It’s a major part of our diet. Good quality tofu shops are disappearing unfortunately. We also prefer tamari over soy sauce. Always organic. Organic miso and Matteo are also a major part of my diet. Konnyaku is another not soy but phenomenal food. Zero cards but very high fiber. It stinks at first so wash it thoroughly and it can make super noodles. Very keto friendly.

      It's definitely not in his favorite cooking oils list (ghee, butter, coconut, olive) and he's really not a fan of deep frying either.

    Studies have long time debunked that even high level of soy long term doesnt change hormone level, so not sure how accurate the rest also is.

      my Bro has the same intolerance to gluten, constant headaches, and I once bought him some quality CBD oil, that is simply taken as drops under the tongue, and it actually stopped his headaches, the good stuff from holland and barretts.

    I adore edamame beans which are juvenile soy beans - I don’t eat much soy other than that even as a vegetarian - but I am looking to grow my own edamame this year. I agree that there isn’t much wrong with any food eaten in its natural state (even cooked just not fundamentally altered) in moderation is ok - but too much of any specific thing in a diet isn’t going to end well - diversity is key. I am really enjoying your videos Dr. Sten Ekberg 😍 xx

      The whole reason soy causes problems for Western populations is that Westerners don't eat them correctly. Traditional Chinese ways of consuming soy include:
      1. Boiling
      2. Soymilk with salt
      3. Fermented soy products
      High heat and fermentation are both ways to denature otherwise toxic soy proteins and phytochemicals, while salting soymilk gives the phytic acid something to bind to. Either way, soybeans are rendered safe to eat.

    What do you know about soy lecithin?
    I have a blood clotting disorder, it's called in L Laden Factor five.
    I know it breaks down the fats in the bloodstream is there anything else you know about this product. Looking forward to hearing from you on this, maybe you can do a video on it that would be great.

      I don't know how it relates to blood clotting. I only know that it is helpful in the digestive track to help emulsify fats. It is similar in action to the body's own bile salts. If that translates into effects in the blood I can not tell.

    Soy cultivation started in Korea during the Gojoseon. Soy fermentation was developed in Korea during Goguryeo. Goguryeo transmitted its soy culture to Japan. Japan didn't develop the fermentation.

      ​@katukatu6617 @3:30 he says that you can eat it in the form of tofu & that's how the Japanese eat it; they usually put soy sauce on top. Just don't eat it all the time as it's harder to digest vs other protein

    Great video! I am just confused about one thing. You said to make sure the soy is fermented, but then mention that eating tofu is okay. I thought tofu is not a fermented product. Am I wrong?

      Tofu is not fermented, but since he mentioned that it was ok in the last part of the video, I'm taking it as that it is ok. I think what he means is that organic - fermented is ok and whole food tofu or edamame would be ok - as opposed to denatured or altered chemical product, like soy protein isolate or textured soy protein. Also in consideration of the fact that the Japanese also include both in their diets, as well as edamame.

      How do you make soy milk? I think that if you consider soy milk a whole food then it would be ok. If not, then no. And it would have to be organic.

    Coconuts are classified as a saturated fat, although the majority of fats contained in the coconut are medium-chain, and therefore, appear to have a more favorable impact on blood lipids and CVD/CHD risk than animal based saturated fats that are of a longer chain such as beef fat and butter.

    The irony, of course, is that the phytoestrogens in soy are generally far less likely to cause problems than the abundant estrogen (not even phytoestrogens, but straight estrogen) in dairy products, milk in particular.

    Soy is high in phytates which are mineral (calcium, magnesium, etc, but especially zinc) uptake inhibitors.The fermented varieties are lower in phytates, but tofu is not. Fish or meat broth eaten with tofu reduces the MUI effect, and that is commonly how tofu is eaten in Japan (and Asia).

      I would think if you eliminate all of the soy oil before eating it, it’s ok. Otherwise would need to be organic soy oil, or other non processed oils

      Studies usually look for symptoms. Some studies have symptoms and some don't. That just measures the severity of the effect. Anything you take in excess that has an impact will have an effect on your endocrine system.

      Would seem to me that there are many more foods such as cows milk or hops in beer that warrant concern.
      Then you have the xenoestrogen problem.
      I would put soy way down on my list , its becoming a red herring at this point.

      Soy intake does not raise or lower a man's testosterone levels. Derived from soybeans, soy is a high-protein substance found in many foods, such as edamame, tofu, tempeh, miso, soy flour, and soy milk.

    Everything is so processed these days. I never realised that it was fermented. I've never really been a fan of Soy.

      Agree most of the food at the grocery store is processed and over processed, but fermenting is a good thing.

      It still sounds bad LOL! It's a bit like tea when you look at the fermentation process. These days, unless you grow it yourself, you can expect it to be processed. Also, so many labels 'look' healthy, but often isn't as soon as you read it properly, or do some basic research.
      Soy was one of those great products that they decided to make even better by ruining it with processing.

    Here in Japan we consume a lot of soy on a daily basis, esp natto ( fermented soy ). We even eat natto for breakfast !😁

      Its usually sprayed with glyphosate and contains less nutrients. It might look like food but thats about all in common those products usually have with real food. You really need someone to tell you that? There's such a thing called willful ignorance. Thints like money and anger can blind

      GMOs are bad because they aren't the same as their wild-type counterparts at the protein level. They introduce a lot of alien proteins that the body isn't able to recognise. Normally, this isn't an issue if the gut filters them out, but our modern genetic modification has resulted in side effects that reduce this filtering capacity. Extra soy lecithin, for instance, makes modified soybeans behave as soap to the gut lining. If your body can't handle these foreign proteins, it'll treat them as pathogenic, and inflammation takes hold.

    GMO vs "organic" is a red herring. Scientifically what is the nutritional difference? Show me the evidence that GMO anything has an direct measurable effect on health. I am not a fan of mega corps but I am a big fan of facts and data. The big plus of GMO crops is more food with less pesticide/herbicide use. More food for more people is a big health plus.

      Nope, you’re incorrect. He knows exactly what GMO is. This video is about soy, not GMOs. Not everything has GMOs. There’s a lot of food without it. You just have to pay more for it.

    You say that the majority of soy sauce consumed is genetically modified but kikkoman (the #1 soy sauce in the world) is non-gmo. Stop spreading lies!

    You say genetically modified foods are bad for our health but you are not giving any resoning - most fruits, vegetables and grains we eat today have been selectively bread to become what they are today - which is genetic modification.
    Whats the difference between breeding and using crsipr to change certain genes?
    Lets say we take a 10.000 year old grass and genetically modify it with crispr to become just like modern grain. Whats the differece?

    Once started to eat a lot of tofu and add soy beans to my salad since it's cheap and I was broke to buy meat. Noticed my manboobs grew quite a bit so I stopped.
    Japanese eat a lot of soy but then again all Japanese men look girlish enough to the point that you sometimes can't even tell their gender.

      That's controversial. I have heard it's untrue. Kinda like the covid vaccine causes people to become magnetic. Soy intake does not raise or lower a man's testosterone levels. Derived from soybeans, soy is a high-protein substance found in many foods, such as edamame, tofu, tempeh, miso, soy flour, and soy milk.
