Without oven
Spices for Mutton Leg
1.5 kg Mutton leg
1 tbs salt
1 tbs red chilli powder
1 tbs coriander powder
1/4tbs turmeric powder
1/2tbs kashmiri red chilli powder
1/2tbs black pepper powder
1/2tbs cumin powder
1tbs garam masala powder
1 tbs hot sauce or chilli sauce
2 tbs white vinegar
2 tbs full hung yogurt
4 tbs lemon juice
2 tbs garlic paste
2 tbs ginger paste
For wrapping
aluminium foil
parchment paper
How to steam
large size pan
1 stand
1 tray where you place Mutton leg
plenty of water but above 2 inches from the water surface
cover for 3 hours
Mandi Rice
1kg basmati rice
1 medium size sliced onion
3 dried lemon
2 cinnamon sticks
5 green cardamom
1 black cardamom
2 Bay leaves
1 tsp white cumin seeds
4 cloves
2 dried red chilli
2 green chilli
1/4cup oil
Chutney
1/bunch fresh coriander
3 tomatoes
3 green chilli
1 lemon
1/2tsp salt
