What i think that arrows overwrite team mentality. So if you have attacking mentality and give defensive arrow to a player, he would be with defensive mentality. Same should be with striker. Otherwise with hard defensive mentality all players without arrows would be on hard defensive mentality so noone would try to attack. But maybe this isnt like i think.
Wow... I add defensive arrow to my striker but my 2 AMCs have attacking arrows. This makes him play deeper and overload the midfield like a false 9. It works 4 me.

Yes you can change the arrows during the game.
