RECIPES:
Blueberry scones
Ingredients
Blueberries
2 cups of flour
3 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup ( 115g ) cold butter
1/2 cup ( 120 ml ) milk
1 egg
Mix all dry ingredients in a bowl
Add the butter and combine well
In a separate bowl, mix eggs and milk , froth the mixture
Combine dry and wet ingredients, mix well
Add the blueberries
Knead by hand in a well floured surface
Using a cookie cutter, cut the dough
Brush them with milk mixture or egg yolk
Bake the scones for 18- 20 minutes ( 200° )
Enjoy
Chicken Pho
1 chicken carcass
1 onion, roasted
1 ginger, roasted
2 litres water
2 tbsp fish sauce
1 tbsp sugar
1 tbsp chicken bouillon
Pho noodles
onions
cilantro
scallion
Pho Spices:
2 star anise
1 or 2 cinnamon stick
cardamom
1/4 tsp cloves
2 tsp fennel seeds
2 tsp coriander seeds
( remember to toast everything on a dry skillet )
Shred off all the chicken meat from your carcass and set aside
In a large pot, add all the ingredients, chicken carcass, toasted onion and garlic, fish sauce, sugar, and chicken bouillon
Bring this to a boil
Once boiling, reduce heat and simmer for 1 hour
Once broth is done,
Clean the broth, season with salt and adjust the seasoning to your preferred taste .
Assemble your bowl with pho noodles, shredded chicken, thinly cut onions, cilantro, scallion and any additional garnishes.
Enjoy!

I like dark coffee and use Guatemalan or Sumatran. Use Bodum French press. You are an incredible cook and baker taking such care in everything you do.

Always looking forward to your vlogs. The soups and scones look so delicious. I do not drink coffee. Always love the smell of fresh brewed coffee but do no enjoy the taste. Hey Jen, another very enjoyable vlog. I too like to make sure all is tidy & neat before I go out, so when I come home I can immediately relax, I find outtings stressful sometimes, shopping too so it works for me :) The meals looked delicious & the blueberry scones look so yummy, I bake them a lot & also sultana & cherry is a favorite too. The coffee I can only imagine was real good, I must look out for some Ugandan coffee!! My fav is Arabic coffee. Hoping for a nice warm sunny day tomorrow, today was a lot of heavy rain :/ Have a great weekend & week, take care x

I am the same, it is nice to go out sometimes but I prefer being at home and do the things I like.
I haven’t tried sultana and cherry, might have to try them one day.
It was our first time to try Uganda coffee and we loved it. We also love Arabic coffee specially in our morning coffee. The weather here is so bipolar these days, yesterday we had a little snow shower and is predicted also today. Hoping for a warmer weather this weekend. Have a wonderful weekend dear🤍🌷
My everyday coffee in the UK is Lidl Columbian Risaralda & I use a cafetière. I do enjoy your videos.

Glad to see the snow has left Helsinki and that you were able to go to the Coffee Festival. I like a coffee called “Morning Walk” from Grounds & Hounds. The coffee is a light roast and is organic. Their Italian Hazelnut is good too. They donate a portion of their profits to dog rescue charities. I use a French Press to brew my coffee. When the glass beaker breaks - which it will since I have granite countertops- I’m getting the brewing system like you have.

Stoviglie, non mobili perché nello stile della mia casa non starebbero bene. according to some expert saying that the green tea isn't good for liver but other saying that it is good for health , umm am thinking ok.?/? but my opinion is everything moderation eating, or drinking which means should drink tea or coffee one or two cups a day ( I see people are drink four or more cups a day especially adding - sugar and creamer yeah, I would say that's excessive which isn't heathy at all), very nice Apt.

I agree with you. Although we drink coffee and tea daily, it is in moderation. Lately, we drink 2 cups of coffee and one cup of tea, it’s either after meal or before bed. Sometimes matcha tea when I feel like it. I don’t add any sugar or creamer in my coffee or tea. I prefer black coffee, no sugar. It is the same when I cook or bake. Smaller portion and in moderation. ☺️

Our kitchen is filled with Fiskars products (and I love them) so obviously just can't get enough joy of spotting you, also using them for cooking and baking :) great videos, big fan here :)

Hello Jen 🌼 The coffee festival looks like such a wonderful event. I have a 13 year old Jura coffee machine. I buy whole bean coffee from a small local British Columbia roaster. It seems like you had a lovely couple of days with your husband and niece! That coffee festival looked fabulous! I could almost smell the aroma of the coffee! I am a coffee lover!
I want to up grade what we use to brew our coffee. We have an upgraded automatic coffee maker. It does brew a good cup of coffee, but, not as good as what you're using. It's hard to get my husband to change, but, I'm working on it 😉! Great video, as always! Thank you!
