I am attempting this today for mothers day. My mother is maltese. I made the mother dough yesterday and just made the child dough. Now they proofing for the 2 hours. You say full degrees but has Mark 7 is around 220 degrees c. My oven goes way beyond that. Would 220 be ok?
I went with 220 c. They look ok just waiting g on my mother to turn up. Hope ive done a good job. Thank you for your reply. Next thing I really really want to try is patstitzi love those but they look very complicated to make haha. Will let you know what my mum thinks to the bread. Overall your method was really good. Very simple and easy to understand. Fingers crossed it meets the seal of approval will be having maltese bread all the time if ive done it correctly:)

I used same ingredients and measurements but the mother dough came a bit sticky
Its normal the weather makes a huge different aswell. At the moment we are doing the bread it is not coming like in summer believe it or not.
You can always play around add a bit more flour. You will find for yourself what to add and reduce
