    Just cooking the green beans to crisp-tender is fine if you're serving them on their own. But with the ragout, you really should cook them a little more. The cream sauce on top of the very crunchy vegetable is a very weird texture for the mouth. Also, I'm confident that 18th century Americans would have cooked their green beans longer, so that they're softer to the tooth.
