I was looking around India with Google Earth, which is really hard by the way, India seems to block EVERYTHING I want to look at, anyways, I was touring a Temple thing downtown Hyderabad, I don't even remember why, BUT I was trying to peek at what was going on in the streets around this temple, and I zoomed in on a curious looking food stall, well I then searched for the food stall which then led me to find an article about "Ram Ki Bandi", so THEN I searched for a video of "Ram Ki Bandi" and that's how I then found you! I'm at a loss as to why I was even looking around India in the first place, but I'm glad it led me to your videos! "Hello! from Texas".
Khaman and Dhokla difference : Khaman is prepared using gram flour (besan), whereas Dhokla is prepared using rice and typically is white in colour. Trust the above clarifies the doubt.
Difference between Khaman And Dhokla: Khaman are usually made from 'vati dal' means coarsely crushed chana dal and the dal is then left to ferment and then mixed with spices and base like Baking Soda or some restaurants use Washing Soda too. Then that is steamed. After steaming we make a tadka(Vaghar in Gujarati) of oil, mustard seeds and hing and garlic(at some shops) and ground coconut(at some places). While eating Khaman you can find that slight bite because of coarse ground dal. Dhokla is made with rice and tuvar dal (rice as major part). These two are soaked for a night or so and then next morning ground and left under sun to ferment till evening and then crushed green chillies, ginger and garlic and baking soda (Washing Soda in some restaurants and caterers) are added and then dhoklas are steamed. Dhoklas are usually white made at my home but they are usually yellow by adding turmeric. Dhoklas are comparatively thin to the Khaman. Dhoklas usually don't have a bite and they are like an idli in texture (a bit dry than idli not that sticky). Dhoklas are not given a tadka if they are eaten fresh (immediately after cooking). But the leftover dhoklas are broken into crumb and then we toss the dhoklas in oil, garlic, hing and mustard seeds so that they get hot and the dryness turns into tasty grease of oil and garlicy flavour enhances the palette experience and they get a little crispy from the edges. You ate at Chandra Vilas were not authentic Khaman they were the Nylon Khaman, they don't need fermentation they are instantly made with gram flour and baking soda or Eno and they are steamed and we give a sweet tadka with curry leaves, mustard seeds, heeng, sugar and coconut (sometimes), they don't have that sour flavour.
