Ingredients:
4 kg pork shoulder
3 kg of bone and skinless flank
1 kg neck
2 kg of beef neck
100 g of pressed garlic
4 g marjoram
20 g ground pepper
15-20 g sweet Hungarian peppers
2 dkg of salt per 1 kg of meat
8 g of crushed cumin
1-1.5 l of water
For 10 kg of meat about 12 m of intestines

As a teen, mid 1950's, I helped my mother make sausage from our own pigs. We smoked the sausages and hams. Wonderful stuff. We had real pork rinds not the puffed up snack of today.

Wonderful video. I enjoyed the restoration, the history lesson, and the sausages. And I really enjoyed the music at the end while you were making the sausages - American country music. You have really developed your channel. To show how to use what you renovate for better than new condition.
Radek, I have a question. When you degrease with acetone, where does the grease go? Does it run off with the excess acetone, get wiped off, or chemically change? Thanks for another great video. All the way through I was thinking “we are going to have sausage today!”
It reacts with grease like soap. It makes the fats water soluble, so they're easy to wipe off. Acetone evaporates quickly, so it doesn't leave a film like some degreasers.
@@kingedwin so the method is similar to soap and water, but the drying is more efficient due to the fast evaporation. That makes sense! Thanks!
Those are not "sausages" their name is "chorizo" chorizo is a meat sausage originating from the Iberian Peninsula, also traditional in Latin American cuisine and other regions with Spanish and Portuguese cultural influence.🤗
@@Marcelo-56 these are “sausages.” You called them “meat sausages” yourself. Chorizo is a specific type of sausage, but it is certainly a sausage.
@@kingedwin Yup! Also, (compared to soapy water) acetone does a better job at wetting surfaces (and penetrating tight threads for example). On the downside because it evaporates quickly it's not a very economical solution for thick old grease.

When loading the tube, we found that tamping the mixture with a rounded paddle got rid of the air pockets so it didnt creat voids in the casing. Looks lovely, and so much more satisfying than our electric version!

Один вопрос: обычно в месте крепления ручки ставится фиксирующий винт, чтобы ручка не сваливалась в процессе работы. Неужели на этом аппарате его не было?
По поводу колбасок - Радек, Вероника, так нельзя!!! Мне же худеть надо. (((
Здравствуйте Владимир, да хороший вопрос. Винт изначально не стоял. Сделал резьбу на оси под возможно винт, но в процессе работы винт заедает. Устройство имеет быструю и медленную подачу, ручку нужно переворачивать и каждый раз выкручивать винт. Это излишне утомительно. Ручка смещается при каждом нажатии. Добрый день, Радек.

It is amazing, and weirdly pleasing, that you can take a utilitarian and mundane item as a sausage stuffer and turn it into such an ascetically pleasing object. Practical and useful? Sure. Attractive and interesting? MOST definitely!

Radio I hunt elk here in the USA. Its similar to red stag in the EU as I understand it. If its legal to do so ill send you some ground meat to make sausages with. That would be really cool to see. What an old war horse of a sausage stuffer. Modern ones are really cheaply made by comparison. The one I have is fine but nowhere near the level of this beast! Thanks for your hard work as always! Great job. I always like your restaurations even if it´s an object or machine I´m not really interested in. It´s jus the way you do it. And I´m always wondering which kind of people (235 in this case) dislike your video´s. I quess they are the peopel that can do everythbg better or .......... doesn´t like sausages!

You were wrong, Veronica. I could smell and taste them here in Canada. My Grandparents emigrated from eastern Europe in 1920s. I can remember sausage making as a child.

In the 1960s, an uncle of mine who was a butcher gave me one of these he no longer used to play with! I think your sausages would smell and taste delicious! [V 60. letech mi můj strýc, řezník, dal jeden takový, se kterým si už nehrál! Myslím, že vaše klobásy budou vonět a chutnat skvěle![
