How many ounce sinker would you need to prevent a big bait like this from drifting off with the side wash? Let’s just say for a relatively calm sea.

size of the sinker should be determined by the rod you have rather than the bait.
then the Type of sinker should be determined by the sea conditions.
I hope that helps?
I would have used a 6 or 7 ounce cone sinker in a flat sea.
