      How long would you recommend leaving the shrimp in the acid for? I imagine if it goes too long, it turns to sour mush. I am thinking that it depends on the size of your shrimp, so you just have to run a spoon through every so often and see if it has just hit done.

      It's Mexican ceviche. I make fish one at home. Make sure to throw out the old lime juice, it won't have a nice flavor, you can put some new lime juice after.

      @@coffeesnob3778 yes exactly. Ceviche is technically a cooking method. So if you are just mixing pre-cooked/boiled seafood with lime juice and the other ingredients, it’s not technically ceviche.

      If you hate cilantro... it may just be genetic. I think its like 15% of people have a gene that makes cilantro taste like soap to them... and nothing you do can change that unfortunately
      I love cilantro and can't imagine being unable to eat Pico De Gallo or properly made tacos

      Can't get enough of the stuff.
      Cilantro pumpkin seed salad dressing is my favorite. I first had it 30 years ago at El Torito restaurant in Escondido CA. The cook wouldn't allow me to get their recipe so being one who's always been good at cracking those 'food codes' from restaurants anyway & with a tip from the waitress (use Mexican mayo & sour cream), I did it. Now all you have to do is Goog it & it's there!
      Delicious & so fresh tasting!😋🥗

      It is a genetic thing! Cilantro tastes like soap to me. I usually substitute thyme (I've been told it's a passible swap out).

      ​@@lindenhill951 I'd never heard of that being a swap, and as someone without the soap gene I don't particularly find they taste similar. I've seen parsley recommended and imo it tastes closer.
      alternatively, theres this thing called "culantro". it has a pretty similar taste, but its tougher leaves as opposed to the soft fluffy leaves of cilantro. apparently culantro isnt affected by the soapy-taste gene

      Yeah being Mexican I have no familial ties to Peru so I didn’t even know ceviche was also a typical dish in Peru. Ceviche is also common Mexican dish and Pico de Gallo and Avocados in Mexican dishes is really common.

      I wouldn't say "cook."
      The acidity from the lime denatures the protein and the acidity has a certain degree of antimicrobial affect.
      When you're cooking something, the heat is also denaturing the protein but through a different mechanism and has a more robust effect on bacteria.
      As long as you have good quality shrimp, it won't matter either way

    Awesome ceviche, amigo. I, "cook" salmon this way too! I leave it in for at least 8hrs. Along with a little dill, little salt and nothing else. Let the salmon be the star. It's great on a crusty or toasted bread or on water crackers. Maybe a little purple onion for garnish. I like to make it on weekends so we can be lazy and just snack on salmon. 😂

    To me when I was about 15 years old back in 79 I have friends from Ecuador and they treated me to ceviche and that to me is still the best food in the world and I am from Puerto Rico 60 years old in New York and I still missed that food to the day it is so healthy and full of so much goodness it’s even better than the food we cook in Puerto Rico because it’s healthier for sharing HI & bye from New York

      ​@Sequence303 He tripped over the r, it's a short roll because there is only one. Instead of the hard R sound using the middle of your tongue, say the r with the tip of your tongue more like the T sound and gently let it flow into the O.
      But no, it's not necessarily as much the r rolling as much as it is the entirety of silAntRo that is so grating on the ears.

    Man i see why they pushing you to cook for them. Trust me when your the person they only recommend bring utensils or napkins and non food items they trying to tell you something. However if you cone highly recommended to cook food for them, they trust and love your food. That says a mouth full. 😋 You have a gift and people want to experience it.
