Broccoli Cheddar Soup | Copycat Panera Bread Recipe

- A couple of weeks ago I was craving a bowl of Broccoli Cheddar Soup from Panera Bread. I decided to try making my own version! Today I’m sharing my results for a Copycat Panera Bread Broccoli Cheddar Soup. It’s creamy, cheesy, and perfect with a warm baguette on the side for dipping. Hope this cozy recipe hits the spot!
Broccoli Cheddar Soup
1 small sweet onion
4 Tbsp. unsalted butter
¼ c. all purpose flour
1 lb. broccoli (2 small crowns)
1 c. carrots
1 1/2 c. half and half
1 1/2 c. milk
3 c. chicken broth
salt, pepper, nutmeg
8 oz. sharp cheddar cheese
Finely dice the sweet onion. Melt the butter in a Dutch oven over medium low heat and add the diced onion. Cook, stirring occasionally, until soft and translucent. While the onions cook, cut the broccoli into bite-sized florets. Cut carrots into coins or grate with a box grater. Shred the cheddar cheese with a box grater.
Sprinkle the flour over the onions and stir to coat. Cook for about 1 minute. Pour in the half and half, milk, and chicken broth, stirring to combine. Bring to a simmer, stirring occasionally. Add the broccoli and carrots. Cover and cook on low for about 20 minutes or until veggies are tender. Season to taste with salt & pepper. Use an immersion blender to puree to desired consistency (you can also use a blender, just be sure to keep the hole in the top open and cover with a dish towel to allow steam to escape. You can puree all of it or just a cup or two and add it back). Add a pinch of nutmeg (1/8-1/4 tsp. depending on how strong you’d like the taste to be). Sprinkle in the cheese and stir until it melts completely. Serve with warm baguette bread for dipping. ENJOY!

I diced and sauted an orange pepper and minced garlic with the onion. I seasoned through each step. Also, I augmented with a few other spices such as sweet paprika and a small amount of red pepper flakes. Thanks to you, my family really likes Panara's soup but loved your version even more!

This is my families favorite soup. Especially with the bread bowl. But they run out of the bread bowls so quickly. Now we can try and make it ourselves.

Broccoli stems have identical flavor as the florets. Chop your broccoli stems finely as you did your carrots and use them as well as your florets in your soup rather than wasting them by throwing them out. Nice recipe. Thanks.

What does the nutmeg do?
I think it’s commonly used in dishes with green veggies-pairs well with them and adds a bit of warmth. (But if you don’t use it the soup will still taste great!)
