    Hi! Since you have tahini now-find a basic peanut butter cookie recipe and swap the peanut butter with tahini. They are so delicious! And you will for sure taste the tahini 😊

    I make mine with sour cherries and toasted pecans. I also swap half the flour for whole wheat pastry flour and put a tsp of cinnamon in them. My brother calls them my busy cookies.😂

    2:48 I use salted butter too. The key is just to know what your salted butter tastes like. Then you can adjust the salt if you need to (but honestly, most cookie recipes could use a little more salt anyway).

    Salted butter for everything!!! If you're scared of too much salt leave out the salt in the recipe.
    I am currently trying to make the cherry cookies but making it with browned butter. I can hardly wait!

    I agree with your sister... I always use salted butter and add the called-for salt and everyone says my cookies are the best they've ever had... the only time I've ever used unsalted butter was when the grocery store didn't have any salted... and I was upset about it. 😂

    I used to get flour everywhere when I was sifting too. I came up with the best way ever to sift. I have a piece for parchment that is used just for when I sift flour. I lay it out on my counter and sift directly onto the paper. My parchment is wide so it really covers a huge area. Once I’ve finished sifting I just lift the sides together and pour it into my mixer. You make a mess to prevent a mess!

    i love dried cherries in so many recipes that are sweet....in cookies for sure though usually I add it in an oatmeal base but also good in lemon flavors and with choclate. I highly recommend playing with that ingredient

    Vanillekipferl (Austrian Vanilla Crescent Cookies)
    Popular throughout Europe, these shortbread cookies are of Austrian origin and their vanilla-infused flavor and melt-in-your-mouth texture are sure to win you over!
    2 cups AP flour; 1 cup unsalted butter , softened at room temperature
    2 large egg yolks (optional; it does make the otherwise dry/crumbly dough much easier to work with but the cookies won't have quite the same melt-in-your-mouth texture *see Note)
    4 ounces (about 1 cup) ground walnuts, almonds or hazelnuts (see blog post for more info)
    1 package (1 1/2 teaspoons) vanilla sugar
    (see pictured instructions in post on how to make your own vanilla sugar)
    3/4 cup powdered sugar (aka confectioner sugar); small pinch of salt
    For Dusting: 1/2 cup powdered sugar; 1 packet (1 1/2 teaspoons) vanilla sugar
    Step 1. Place all of the ingredients in a large bowl and knead until thoroughly combined. Unless you're using the egg yolks the dough will be pretty dry and flaky, like shortbread cookie dough. Shape the dough into a log and wrap with plastic wrap. Chill in the refrigerator for at least an hour.
    Step 2. Preheat the oven to 350 degrees F.
    Step 3. Cut off small pieces of the dough and shape them into crescents. Place the crescents onto a non-stick or parchment-lined cookie sheet. Bake on the middle rack for 12-15 minutes (depending on the size of the crescents) or until the edges begin to turn golden.
    Step 4. Combine the powdered sugar and vanilla sugar. Let the cookies sit for one minute and then use a sifter to dust them with the vanilla-powdered sugar while they're still hot. Let the cookies cool completely and then give them a second dusting.
    Step 5. Stored in an airtight container in a cool place, these cookies will keep for several weeks.

    I've actually had an oatmeal cookie with tahini in it, and it was really good. Someone at my friends' work used to make them in jars as a "ready to go type" and give them a gift at Christmas. They were shockingly good

    I watched a baking video right before this and saw a mixer attachment that you’ll like. It’s essentially a guard that attaches to the edge of the mixing bowl so the dry ingredients don’t fly into the air. May be easier to use than a towel? It also had a section where you can pour ingredients in without lifting the guard.

    I use a stand mixer all the time I used a large paper plate I cut a hole in the center just big enough to fit around my mixer attachments and cut one line from the hole to outside of plate it fits perfectly around the top of mixing bowl to prevent stuff from going everywhere and when I'm done I just thought away the paper plate. It works better than a towel.

    I make dried sour cherry and chocolate chunk cookies pretty often!
    To really take them over the edge, chop the cherries roughly, then toss them with a little bit water and a few drops of almond extract. Then, let them sit for about 5 minutes to soften and hydrate a little. Pour off any extra water (add it to your coke for a yummy cherry coke) and add to your cookies.
    Almonds and cherries are in the same family, and the almond extract really amps up the cherry flavor.

    Tahini is the base of one of most delicious traditional desserts consumed in Greece, sesame halva. It's also perfectly combined with lots of ingredients, including chocolate.

    Dry and wet measuring cups are SUPER different. I think 3 cups of chips in a liquid measuring cup is WAY more than actually 3 cups

    Baking soda will give you a crisp cookie. Baking powder will give you a cake like texture. Using both gives you a soft middle with a slight crunch on top and the edges.

    I've been making miso chocolate chip cookies and tahini chocolate chip cookies for years. Tahinis are my favourite. I put it with the butter and sugar at the beginning of the recipe, not after dough is made.

    I love tahini and a friend made me tahini chocolate chip cookies and they were amazing! Dried cranberries are delicious in chocolate chip cookies as well.

    If you want a really good cookie, try adding the tart cherries to the brownie cookie, or try adding butterscotch chocolate chips to the brownie cookie. They are both fantastic. Every time I make either of them my friends go crazy for them.☺️

    Honestly, ChatGPT is a life saver and saves so much time from scouring articles. The recipes I've tried weren't the best, but it's really helpful for subject matter.
