- Reverse seared tritip, topped with crispy garlic, chimichurri sauce, served along cheesy mashed potatoes. I used my @bradleysmoker Digital to smoke this tritip to a perfect medium rare.

Cheesy mashed potatoes
4 golden potatoes
1/2 cup chihuahua melting cheese
2 tsp garlic paste
2 tbsp sour cream
Salt and pepper to taste

Can someone please explain to me what reverse searing is?
Reverse sear is bringing the meat up to desired internal temperature using indirect heat via smoker or emersion circulator then searing the outside to achieve a nice crust and a perfect doneness inside. 👍🏻
