This is exactly the job I did for 16 years - vinyl extrusion. Years back it was a little bit different, but when company ordered new extruders from Austria, their specialists came to set up everything and fine tune tooling. They also brought their way of stringing it out through sizers and water tanks. I see their logo on top of sizer here, I'm pretty sure it's them. Same thermocouplers, water and vacuum lines ... man, this bring so many memories ... I can almost smell that melting vinyl lol. A month after this video was posted I quit that job and went to work in food extrusion ... making double money, working 10 times easier job, but never felt satisfaction as in plastic extrusion because is so delicate it takes years to learn all tricks. My new job can be done by anyone after 10 days of training.

why is the profile perforated with this piece of metal? Is to let air oder water inside?

Hi it's to stop the profile from blowing when you run it up to the die(to stop a cram up as I call it😃)

Also to help the vacuum channels in the calibration to suck open any cavities to their shape. But you must do it so the holes are out of the cooling tank before the water level in the raises above it or you might get a jam up as the water would travel inside the cavity and cool that section before it gets into the calibration unit.
