Unless the Ninja skin is on a special server, it probably looks like a purple skin to the casual player who goes straight to slither.io without mods. I recently rewatched the "Turtle Skin" video from three years ago. There was one flash -- blink and you miss it -- when Master Ov started up a game, and the snake was purple before becoming Turtle. EDIT: "They might confuse themselves because they're both purple." On the other hand, they might be using different mods, and only look purple to us.
