    Recipes:
    CHICKEN STOCK
    2 pounds of smoked chicken bones from Episode 15
    2 onions
    2 cloves of garlic
    2 Stalks of celery
    1 Large Carrot
    handful of parsley stems
    Approximately 12 cups of water
    1 tsp of black peppercorns
    2 tsp of kosher salt
    ROUX
    1/2 Cup Peanut oil
    1/2 Cup Flour tightly packed
    GUMBO
    Roux
    2 Tbs Bacon Fat
    About 1lb Andouille Sausage
    2 Poblano Peppers
    2 Cloves Garlic
    3 Medium Onions
    4 Stalks Celery
    10 Cups Chicken Stock
    2 Cups sliced okra
    2 tsp of salt
    1/2 tsp of black pepper
    2 bay leaves
    1 tablespoon of Cajun seasoning
    Handful chopped parsley
    1 Tbs File Powder
    2-3 Cups Smoked Chicken
    SERVING
    1/2 Cup Rice
    Pinch Chopped Parsley
    Dash of File Powder
    Hot Sauce to taste

      I'm not sure why this video has so few views, this is probably one the absolute best things I make. And of all my videos, probably the best most delicious tasting dish in the list.

    You lost me with the carrots

      There're no carrots in the gumbo. The carrots were part of a mirepoix for making stock. Standard issue French technique. But if it's not for you, I completely understand.

    Looks FANTASTIC !!! Great job !!! I will have to try the roux on the drum method !!! I usually make a dry toasted roux in the oven !!! I bet this would be awesome on a cool friday evening at a comp !!! 🏆💪😁
