The issue is that the compressor goes out every two years because it's not made for it. I love your set up, but wish it got colder!!
Why would anyone spend 900 USD on just the chiller? Just buy a horizontal freezer, it comes with all the cooling mechanisms you need, no pump needed, no piping needed. Its literally ready to go, for half this price. PLUS you can actually use it as a freezer by simply emptying the water if you dont feel like plunging anymore.
I bought a Mountain Top Recovery unit and the chiller isn't working correctly. Have you ever reviewed their product? I need to get the chiller repaired and wondering where to go or who to call? I think the company went out of business.

Good review except i don't think this is an easy install for newbies. Your review made this seem like "plug and play". No mention of pump, hose, or fittings. Very easy to get the wrong stuff. Nice overall review though, thank you!

What is capacity of your chest freezer? How long it takes to make 2x2 feet ice?

I'm not exactly sure what you mean by "stick the hoses in" ... what type of ice bath are you using?

Depends on the air temp outside... id say like 5 hours with 70 degree air temps
