I tried to make the cake yesterday but the cream is no where like how yours look, I was wondering will it be because I didn't whip enough time, or I didn't whip it with fast enough speed? The whip cream is cold when I start whipping it and does look like the thickness you had from your video but it didn't thicken more like you said in the video...So I wasn't sure what I did wrong..Do I need to keep the bowl with the cream with ice to keep it cold?...Will using heavy whip cream instead help the situation? I didn't even have enough cream left to decorate cake...I had 19 layers and was just barely enough to cover the whole cake and I wasn't applying the cream as thick as yours as mine seemed lot less dense than yours. Pls use whipping cream with at least 36%fat, I use dairy whipping cream. I keep my cream, whisk n bowl in fridge, after cold only take out to to whip, also on aircond while whipping n applying cream. Be sure not to whip on high speed all the way, I only use 2-3speed out of total 5speed on my mixer. When near end, I change to whip at lowest speed, be sure not to overmix, or else it will melt as soon as u apply, Be sure to follow exact consistency as per video. Do not overmix.. As applying n spreading motion = continue whipping the cream. N what is your cake size?mine is 7inch cake n also I use measuring spoon to equally measure my whipping cream. N if your cream is not properly whip, it become melty n runny for sure the volume is not rise n whip like mine so much volume. So be sure your cream is whipped,correctly

We were so excited to try the cake this morning but we are all disappointed..I failed as the crepe seems too thick and cake is so stiff 😫...I know for the first few crepes I made it little thick but after 3rd crepe, it is pretty thin and I cooked it little longer till is more crispy on the edges that made it easier for me to flip over. I probably will need to make it even thinner next try. I don't think is supposed to be stiff (很硬) right? My hand mixer has 9 speed and I was using 3-4 level only, I just don't know maybe I didn't whip long enough as I was afraid to over whip but obviously the cream was not thickening. Market only got the ultra pasteurized whipping cream from Lucerne Dairy farms, and doesn't really specify how much % of dairy...Will heavy whipping cream help or doesn't really make a difference? Maybe I need to whip longer? Usually how long does it take for your cream to be done? The cake was so stiff unfortunately both my girls didn't enjoy it..😆...Will it taste different if I use cake flour instead of all purpose flour and corn starch? @@siufaylee if your crepe is stiff, there are few reasons, »you overmix your batter when flour is added in »your crepe is too thick, you cook too long for a crepe, it doesnt suppose to be cooked too long. »crepe batter was not rested in fridge well enough before cooking. »crepe batter started to get oil water separation whenever kitchen is too hot, if this stage happen, your batter will look oily and when fried your crepe also look oily next day end up stiff n dry. »Your crepe is not well covered with enough cream, unable to make it moist, but end up dry out in fridge overnight. »heavy cream is good, make sure it's daily.. if your kitchen is hot, your cream will never be whipped up, no matter how long. Best temperature to whip cream is under 7C, so must be sure the cream is cold always »many of my subs tried this recipe n they dont have problems with stiff crepe using all purpose flour n corn starch though
Use pan to bake? Or to fry crepe cake? For easy handling, u can start with smaller pan size for crepe cake, easier for u to flip for the first time. But need to use lesser batter for smaller pan

No, U can decorate after the leftover cream is done beating into stiff peak, take out crepe cake from fridge, decorated and place back for at least 3hours. But I highly recommend to place it in fridge overnight for best result, coz next day the crepe will be even soften n infused blend in with all the flavors

U mean the whipped cream? If Your whipped cream is runny means you have overmixed them. For whipped cream to work, it had to be cold, pls on aircond when beat b applying it. And also u rather undermix than overmix it, if u undermix first, when apply that time the motion is equal to continue beating, cream will get more stable as u apply. never ever overmix whipped cream, else it will melt as soon as u apply.

Yes too hot it wont work, for crepe cake recipe frosting, must be rather underwhip, cant be whipped till harden or crumps, thats way too much overbeat will turn runny as soon as u apply them. Please watch my video again n look carefully for soft peak consistency

哦,我把剩余的奶油打发多一些,后放入裱花袋,收进冰箱等待哦,其实蛋糕外层奶油够硬了大约1小时就可以布置了,之后再放回冰箱继续冷却。。
其实隔夜吃,口感更顺哦

面糊太厚会硬
搅拌面糊过度会硬
做好没有休息面糊在冰箱会硬
厨房温度过高,面糊水油分离,煎时出油,凉了就干哦
@@iwen777 其实动物奶油感觉很难拿捏。有怎样分辨已经可以拿来抹里面和外面。我有把搅拌好的面糊盖着放入冰箱冷藏2个小时。可以放隔夜吗?原来煎皮的时候,厨房热也是会影响,涨知识了。煎好的皮我扑好了有拿已经扭干的湿布盖,这样做对吗?

可以,不过奶油因为需要一点点时间打发稳固些,你可以在这个时候先把蛋糕放冰箱等候,打发奶油好,再出来布置,蛋糕更稳固

牛奶1ml=1.035g 哦,你大约算应该是724.6ml左右。
你可以尝试,就不要加盐了。
不过我觉得真正牛的butter较好吃。因为olive grove spread 是植物提炼成的

奶油打发不会很久,奶油 一定要冷,我的奶油,碗,搅拌器都放冰箱,冷了在搅拌。开冷气做,不然不能打发。千万不能打发过渡,不然一抹就融。请看我的影片

@@danielfong781 如果没冷气建议你拿一个更大的碗里面放多冰块,奶油的碗放在冰块上面隔着冰块打发。有帮助的。抹的时候也尽量要冷,选很早的时间或晚上较凉得时间做吧

牛奶就是dutch lady milk那种 咯。
无盐牛油,就是没有盐的牛油咯,unsalted butter方块的,不是planta。如果买不到无盐,可以用有盐牛油salted butter,就不要再加盐了。
