    @6:44 - As an alternative to manually prepending an empty element to the categories you can add `{ include_blank: true }` as the optional 3rd parameter. If you pass a string instead of `true` you can specify the text displayed in the first option e.g. `{ include_blank: 'Please select a category' }`. An alias for this is also using `prompt` has the key which reads a bit better when also specifying text to be displayed, e.g. `{ prompt: 'Please select a category' }`
