I found your channel last night from your oat milk recipe and I'm hooked! I woke up this morning and got the stuff to make this, and my jackfruit is currently soaking for tomorrow. I made the mac salad to sit in the refrigerator over night, and I tasted it and wow sooooo good. I love how detailed you are and your recipes are seriously so inventive and amazing. keep posting we need you in the vegan community.

I've been a couple of times, most recently on a cruise around the islands, but I don't feel like I got even the slightest taste of local life. I would be interested to know how much local inspired cuisine is or can be veganized.
Monson Made This you can find Hawaiian favs like loco moco veganized at some spots, but for the most part Hawaiians love their meat. with a surplus of fresh veggies & fruits of cours the love that too but for the most part not a lot of vegan . Unless of course you’re in town.. like Waikiki kine

I don't think Hawaiian food has really had its culinary moment yet. We're lucky here in Las Vegas to have a few good restaurants (which as a vegan, I haven't been able to eat at). From what I've experienced, Hawaiian food is very comforting and savory; it reminds me of a mashup of Japanese and American cuisines, with a bit of Filipino influence. You'll see nori, rice, and teriyaki, but you'll also see Spam, burgers, and brown gravy. Culturally and culinary it's a lot more nuanced than that, but that's my elevator pitch. I know that Hot For Food has an egg yolk recipe that is SO good. Cook up a Beyond burger, top it with some seared tofu, that "yolk", and a bunch of gravy, and you're in business.

Mac salad is one of my trigger foods as well. I love it. The relish adds a bit of sweetness, as well as texture. If you eliminate the pickle component completely, you might want to add a small dash of something sweet to pick up the slack. Thanks for watching and commenting!

Someone may have already mentioned this, but you can get green jackfruit in water rather than brine. This would eliminate the need to soak it in water and a kitchen towel.
Honestly, that would be a great idea. The jackfruit with the musubi sauce is so good! I really like this meal because even though it's four components, I feel that everything gets eaten together, and mixed and matched. I'm obsessed with the combination of the rice, with the mac salad, with the teriyaki-esque sauce, and sriracha.... Mayo, teriyaki, and sriracha just work really well together. Who knew?!
Awesome job trying to make kalua pig. Next time instead of soy sauce just some hawaiian salt is perfect and also line the dish with banana leaf or ti leaf to give a little aromatic island flavor. Also left over kalua pig stir fry with head cabbage and mustard cabbage.
I buy my jackfruit from my local Asian market. They sell them for cheaper AND they sell jackfruit packed in water, not brine. So there is no need to soak overnight
Monson Made This it was amazing. I ran out of tamari by the time I got to the jackfruit and added too much pineapple juice making too much sauce. I wish my jackfruit was a little drier after baking and I messed up adding too much liquid smoke. Could be because I’m pregnant but I couldn’t stand it. My husband however loved it
The jackfruit had actually soaked for a couple of days by the time we shot the video. The saltiness that she experienced, which, by the way she didn't mind once she ate it with the rice and other items, was from the Bragg's Liquid Aminos. I asked her to be honest, and she was. Haha.
I am very inexperienced with Ethiopian food, but I'm inspired to do some research. Stay tuned. I may have some recipes in the future. Googling Ethiopian restaurants near me right now.
As a Hawaiian I would be really curious to try these. Strange to see the amino/shoyu and pineapple juice on the jackfruit. I would’ve thought just some Hawaiian salt and liquid smoke then pau 👍🏽 The tofu in place of spam and your dashi mix to soak sounds good too. Heads up, do the rice by hand otherwise the way you’re doing it causes the rice to become hard (and go bad) quickly and then poho (waste). Watching you try to roll the makizushi is like watching a child do it-no insult meant, it’s adorable 😊 Next time face it long ways away from you and tuck and roll like you would with dough. Good job on this plate lunch braddah 🤙🏽
Truly, I was waiting for someone from Hawaii to comment on my haole attempt at making Hawaiian food. My love of plate lunches started about 20 years ago when I moved to Las Vegas, and I was truly missing my "Local Plate" after going vegan. I really wanted to try and match the flavors and the experience, mostly to satisfy my own selfish cravings. I agree about the rice. Instant Pot is not the best way, but it is definitely the fastest. And my rolling skills did get better with the 4th one, but I'm pretty sure the shot in the video was my first. Haha. Hopefully I didn't embarrass myself too much. Monson Made This I’m a fan of healthy AND delicious food. Much of the traditional foods around the world (barring certain highly unique climate based diets like seal or whale fat, etc) are vegan or at least majority plant based. So while some of these vegan recipes may seem like new inventions, a good chunk are more re-discoveries of traditional ones. This is also a great way to emphasis enjoyment without spending insane amounts of money. That’s why I like your channel, these recipes are great for those like myself who have become disabled and/or are on an insanely tight (poor af) budget. Your recipes thus far are a great proof of concept for communities abandoned to food deserts whether in a urban or rural setting. I hope to enjoy more recipes from you!

Cultures have been eating foods for years, that we in the west are just now "discovering". I try to show a balance of healthy and indulgent, and I try to make recipes that don't require too much special shopping, or difficult-to-find products. If people see that it's easy and delicious, then they're more likely to try it and hopefully stick with it.
The short answer is no... For savory dishes, you want unripe, "young" jackfruit. If you're buying it fresh, its most likely going to be ripe. "Young" jackfruit doesn't really have any flavor, so it's great for taking on other flavors. Ripe jackfruit tastes very fruity, like Juicy Fruit gum, and would not be pleasant in this dish. If you can find unripe jackfruit that's fresh, then go for it.
W.U.E. (Western Undergraduate Exchange).... Folks from Hawaii can attend UNLV for the price of in-state tuition. At least that's what brings a ton of people from Hawaii to attend college here.
Sorry to lose you. I knew that I was cooking for non-vegans, and so I chose to try and make the textures and flavors as unctuous as possible. The oil is definitely optional. It helps with browning, and it helps to add the "fattiness" that is missing from the jackfruit. But if you don't want it, don't add it. It's just a recipe. Personally, I think it is more important for vegans to share delicious food than it is to serve totally perfect healthy food. We're trying to help people imagine a life without meat and you are doing important work. And, if we are being perfectly healthy (with no regard for taste) you shouldn't brown tofu. Or use any white rice. Or mayo. Or pasta. Or added sugar or salt. Just saying.

I really like this meal because even though it's four components, I feel that everything gets eaten together, and mixed and matched. I'm obsessed with the combination of the rice, with the mac salad, with the teriyaki-esque sauce, and sriracha.... Mayo, teriyaki, and sriracha just work really well together. Who knew?!
Awesome job trying to make kalua pig. Next time instead of soy sauce just some hawaiian salt is perfect and also line the dish with banana leaf or ti leaf to give a little aromatic island flavor. Also left over kalua pig stir fry with head cabbage and mustard cabbage.

I buy my jackfruit from my local Asian market. They sell them for cheaper AND they sell jackfruit packed in water, not brine. So there is no need to soak overnight

Monson Made This it was amazing. I ran out of tamari by the time I got to the jackfruit and added too much pineapple juice making too much sauce. I wish my jackfruit was a little drier after baking and I messed up adding too much liquid smoke. Could be because I’m pregnant but I couldn’t stand it. My husband however loved it
it'd also be good to maybe rinse the jackfruit twice, It could help reduce the saltiness!
The jackfruit had actually soaked for a couple of days by the time we shot the video. The saltiness that she experienced, which, by the way she didn't mind once she ate it with the rice and other items, was from the Bragg's Liquid Aminos. I asked her to be honest, and she was. Haha.

As a Hawaiian I would be really curious to try these. Strange to see the amino/shoyu and pineapple juice on the jackfruit. I would’ve thought just some Hawaiian salt and liquid smoke then pau 👍🏽 The tofu in place of spam and your dashi mix to soak sounds good too. Heads up, do the rice by hand otherwise the way you’re doing it causes the rice to become hard (and go bad) quickly and then poho (waste). Watching you try to roll the makizushi is like watching a child do it-no insult meant, it’s adorable 😊 Next time face it long ways away from you and tuck and roll like you would with dough. Truly, I was waiting for someone from Hawaii to comment on my haole attempt at making Hawaiian food. My love of plate lunches started about 20 years ago when I moved to Las Vegas, and I was truly missing my "Local Plate" after going vegan. I really wanted to try and match the flavors and the experience, mostly to satisfy my own selfish cravings. I agree about the rice. Instant Pot is not the best way, but it is definitely the fastest. And my rolling skills did get better with the 4th one, but I'm pretty sure the shot in the video was my first. Haha. Hopefully I didn't embarrass myself too much. Monson Made This I’m a fan of healthy AND delicious food. Much of the traditional foods around the world (barring certain highly unique climate based diets like seal or whale fat, etc) are vegan or at least majority plant based. So while some of these vegan recipes may seem like new inventions, a good chunk are more re-discoveries of traditional ones. This is also a great way to emphasis enjoyment without spending insane amounts of money. That’s why I like your channel, these recipes are great for those like myself who have become disabled and/or are on an insanely tight (poor af) budget. Your recipes thus far are a great proof of concept for communities abandoned to food deserts whether in a urban or rural setting. I hope to enjoy more recipes from you!

Cultures have been eating foods for years, that we in the west are just now "discovering". I try to show a balance of healthy and indulgent, and I try to make recipes that don't require too much special shopping, or difficult-to-find products. If people see that it's easy and delicious, then they're more likely to try it and hopefully stick with it.

Can I use fresh jackfruit?
The short answer is no... For savory dishes, you want unripe, "young" jackfruit. If you're buying it fresh, its most likely going to be ripe. "Young" jackfruit doesn't really have any flavor, so it's great for taking on other flavors. Ripe jackfruit tastes very fruity, like Juicy Fruit gum, and would not be pleasant in this dish. If you can find unripe jackfruit that's fresh, then go for it.

Sorry to lose you. I knew that I was cooking for non-vegans, and so I chose to try and make the textures and flavors as unctuous as possible. The oil is definitely optional. It helps with browning, and it helps to add the "fattiness" that is missing from the jackfruit. But if you don't want it, don't add it. It's just a recipe. Personally, I think it is more important for vegans to share delicious food than it is to serve totally perfect healthy food. We're trying to help people imagine a life without meat and you are doing important work.
And, if we are being perfectly healthy (with no regard for taste) you shouldn't brown tofu. Or use any white rice. Or mayo. Or pasta. Or added sugar or salt. Just saying.
