INGREDIENTS
Cajun Seasoning
1 tablespoon paprika
2 teaspoons kosher salt
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper
1/4 teaspoon crushed red pepper flakes
Chicken & Rice
2 teaspoons olive oil
4 skin-on, boneless chicken thighs
1 small onion, finely chopped
1 small green bell pepper, seeded and finely chopped
2 celery stalks, finely chopped
Kosher salt and freshly ground pepper
1 tablespoon unsalted butter
2 garlic cloves, finely chopped
1 3/4 cups low-sodium chicken broth
1 cup long-grain white rice
Parsley leaves and finely chopped scallions, for serving

When I pan fry bone-in chicken thighs I like to partially de-bone them just enough so that they lay flatter in the pan.

I can NEVER find boneless chicken thighs that also has the skin still on. Ina Garten has a recipe using them also.

Millie I so enjoy your recipes, thank you for sharing them here. I would like to see one of your favorite recipes from your childhood. As for the phone in the kitchen, it's a No in my home. Kitchen time is a relaxing time to create and step away from the screens for awhile.
I like Millie and her recipes. She's funny and down to earth. I'd love to see her do a Cajun take on a classic Italian dish. Like creole-eggplant parm or a praline crusted tiramisu.
Millie, my phone is an external vital organ!!! Recipes are downloaded constantly...of course it's in the kitchen!!! If a phone call comes in, I take it. Likewise a text...My answer to germs...SANITIZE!

I don't like taking my phone anywhere near the kitchen. Not only is it unsanitary, it's just not cool to do. It may fall in the let's water bowl.

Hey Millie, my daughter is named Amelia but we call her Millie. On that note, I never thought about how gross my phone could be. I will not text while cooking ever again! Can you make a rockin' spicy, juicy, flavorful meatloaf? Maybe with some sausage in there. And mashed potatoes. Yum. I'm hungry.

Have you done split peas with a ham/turkey bone before? I love various coleslaws with my bean/pea soups. Maybe a sourdough corn muffin on the side. I'd like to see all of that with a twist.👩🏽🍳😋👍🏽

No normally I do not use the phone in the kitchen. Unless the recipe that I'm using is in the phone then I do my best not to touch the phone just because I don't want to get it all dirty with food germs and oils and crap
