Great meals, as always. One needs to strike a balance between lean meals and some comfort dishes (especially with three, hungry boys) One thing you always do a fantastic job of is including lots of veggies into your meals. Hope you all are doing well. Sending love especially to you and to your mom. (Hugs)

Can I please ask how you make your roast potatoes? I parboil, then shake and add to hot oil but they never turn out like this! Do you add anything else? They look so good x
I do exactly the same, I season with salt but that’s about it. Do you have your oven quite hot? That’s important xx
@@Victoria_Foulger I do, but have suspicions that my oven may be on the way out, so it might not be getting as hot as I’d like. Maybe time to bite the bullet and get a new one I think. Thank you xx
The type of potato you use can also make a big difference, Maris Piper or King Edward usually work best for me 🙂
