My husband said if you didn’t say these were Keto Pancake, he would not know. I also made these in my chaffle 🧇maker. This is another keeper for me👍🏾.

I made these this morning and they were delicious, soft, fluffy, and great texture. I made half a batch and only got 3 pancakes. I was a little heavy handed with the batter. I was a little hesitant to try the recipe because I’m not a fan of coconut flour, but all of the Recipies I have tried with almond flour have a grainy mouth feel. To my delight, you can’t taste the coconut at all. Once again you nailed it and hit it out of the park. This is going to be my go to recipe from now on. Thank you so much!!!

I havent seen that epside yet but i did buy the cookbook mythcal chef josh just released. Cant wait to try your pancakes. According to the comments yours seem to be closest the the high carb version.

Ok I had to come on here at let u know about the pancake recipe… I’ve tried so many already made brands and other ppl’s recipes and I hated every single one being I’m a huge pancake lover! So I decided to make your recipe and I swear to u they were amazing I only wish they were fluffy like a real pancake but they did 100% taste like a pancake thank u for working so hard to make keto taste like real food lol I’ll def b making more of your recipes!!! 👍🏻👍🏻👍🏻

New subscriber, here for the pancakes. I haven't made them yet but they sound and look yummy. I am going to try different flavors and different alcohol. I think Amaretto and almond flavoring might be nice. I will have to get some Whey protein. I usually use egg protein powder and may try that and see if it works before buying something else. I have the egg white protein powder in unflavored, strawberry and chocolate so may be a good addition. I am off to see if you have a cinnamon roll recipe and maybe some scones. My daughter and I love going to tea and she is coming to visit in about 2 weeks so it would be great if I could make a few keto friendly recipes. I technically have been carnivore for about 4 months but I don't mind throwing a "keto cheat day" in once every few weeks, as long as it doesn't start any cravings. Thank you so much. You are so talented.

I am absolutely trying this recipe! Ironically I tried to make KETO friendly pancakes this weekend using Almond Flour and it was HORRIBLE! I wish I'd come across this recipe sooner. I may have pancakes for dinner tonight :)
They are delicious, I hope you enjoy! And I figured this out because I couldn't find a good keto recipe online at the time. Pancakes for dinner is all I ever do because I don't eat breakfast anymore, lol.
I made these pancakes as directed with different butter and whipped cream. The pancakes are really good. In the future I would use far less sweetener, about 1 tsp instead of 3 tbs. I think my palate was not prepared for something this sweet after having nothing sweet at all for weeks. LOL I will make these again But with low sweetener. If it’s a very sweet desert you want then go full sweet , add some ice cream or fruit etc.
Great recipe! Thank you! I replaced one egg with egg white and used wey protein (didn’t have the isolate) and it worked well! I was having pancakes with the family and it felt great :oD
I think the batter would be too thick without the egg whites and water to fold in the egg whites but you could try. But it would probably be more of a soufflé than a pancake.
I've made the pancakes twice on a large electric griddle. They are delicious! However, both times I've had trouble flipping them. They bubble and are brown on the bottom but, no matter what spatula I use they seem too wet and flimsy for the spatula to get underneath without some real finesse. I've let them cook until dry edges form, but still the middle is too wet to flip. What am I doing wrong?
Glad you enjoy them! Sounds like the batter may be too thick, it should be the consistency of regular pancake batter, this could just be because of different brands of coconut flour thicken differently. I've also found it harder to cook keto pancakes on a griddle, I think the temperature needs to be a little lower for keto pancakes, so I would try lower temp if thinning out the batter doesn't work. Hope this helps!
I don't know. Always just made it all at once. Most pancake batters don't keep though the air bubbles won't last. It would be better to make and freeze the pancakes in an airtight ziplock bag if you really can't eat all of them. Just mic for 30 seconds on 50% power.

Tried these today, minus the butter and whipped cream, maybe that's the secret to them. I dropped sweetener based on comment here. Something about coconut flour just doesn't do the right texture for me. That being said, if you called them breadless french toast, I think it would be dead on. Flavour was really good, just mind games, brain looking for traditional pancake, getting french toast. I'm going to play around a bit with some oat fibre and see if I can get closer to diner style pancakes.
Thank you for the input. I just remade them cause I haven't had them in 6 months, to make sure I wasn't lying to people that I suggest these to. Mine came out light and airy and taste just like a pancake to me. I don't like our maple alternatives so that's why I made them sweeter, I can just eat these straight out of the pan with just a little butter.

Just made these, amazing! Used wholesome yum keto maple syrup and it rocked. Decreased the sweetener in the recipe to 2 tbsp since I used the syrup

I don't have anything carbonated in the house... never have as I don't like carbonated beverages. What can I use in place of the club soda?
It's what gives the fluffy texture. If that doesn't matter to you, use a low carb milk (it may not be as good though).

Yes, I had the same issue. Pancake batter consistency but really fragile like all keto pancakes. I have the griddle down very low so they don't burn.
