Locals advised me better not to eat meat due to power failure which happens very often and interruption of the cool chain. I took food from well established restaurants only...never from a street vendor and so my memories are quite positive... and the food I got was really delicious without getting any stomach problems. India as a travel country is a phantastic experience , lots of fun and unbeatable cheap. (Deluxe room in a nice hotel for less than 20euro, food for 2 - 5 euro)....Greetings from Germany
India is the most country consumes chilli. Buuuuut as I'm Indonesian. I can say 100% Indonesian eat more spicy. India can eat spicy maybe level 3 But me as Indonesian I can eat spicy level 10.

In France for a long time they forced children to use their right hand. In restaurant, even at home, you'd cut your meat with the right hand, then take your fork in your right one to eat, it was a no-no to eat with the left and an abomination to cut cheese with your left hand. In Japan for a long time the left hand was associated with uncleanliness too.

In India, I think it's similar - eggs aren't washed, so they keep their natural coating and can stay at room temperature. Though, that doesn't excuse all the other hygiene abominations happening in those markets...

Despite the food and the street food aspect, I salute their ability to stay clean by wearing white on a dusty street. If it had been me, I would have soiled my clothes eating with my fingers.
It seems to me that the most important thing would be to worry about establishing a highway code because it seems to me that they don't have any. I can't imagine the number of accidents every day there.

Hey, in the UK we used to get Fish and Chips in newspaper - it never did us any harm.
