    I haven’t tried making this yet. Looks so simple, I’ll try it soon. Yum!
    I felt the same towards cheesecloth. Amazon has unbleached hemmed organic cotton muslin straining cloths for very cheap cost. Makes my Greek yogurt making process so much easier. It’s easy to clean by rinsing out then boiling in a small pot (with soap if you like). I haven’t bought normal cheesecloth since. You will love it!

      Oh man I wish I had seen this comment a few days ago! I already threw this cheesecloth out. I will start doing what you said to save my cheesecloth. I hate being wasteful!

    It’s so fun to make cream cheese! I use the leftover whey in my bread recipe to replace the water. My chickens love it too.

    I remember when I was a child, my mother often made kefir and cream cheese from milk that was mildly pasteurised (every morning the farm employee was putting 4 bottles of milk under our doors and taking empty bottles). Old times (Poland was communist country at that time). I have to check it if at home environment I can remove lactose (well it’s a process of breaking it). I would doing more home stuff then (I do my own soy milk, but it’s really time consuming, so sometimes I buy ready one when I have to much work and remaining time I want to use for sleep 😂). Congratulations for making your first cream cheese!

    When I hang my yogurt or kefir I use food grade muslin cloth(which is reusable) and drape it over a colander that is placed on an upside down mug in a bowl. Works great.

    I have two of her books. The other is all about bone broth.

    1tsp salt per pound dairy is a good baseline

    I have the same concern with cheese cloth, using it only once. But I recently heard that you can clean and reuse them (depending on what you use it for). Instead I use a cheese/nut milk bag, which is reusable.

    If it WAS butter (the yellow on the bottom) , WOW, you created 3 things in one attempt to make cream cheese. Whey, Cream Cheese & Butter!

      @@faithandarrowhomestead i tried making butter from store bought heavy whipping cream and I learned that you have to wash the butter to get the whey out of it. I didn’t know I had to do that and that was the stinkiest butter I ever had, I threw that butter away after a week or so in the fridge not know what I did wrong until I researched it. So, I started over and the second time washed it off a lot until the whey was no longer coming out of it. Much better 😊 Also, interesting enough I do have that book Nourishing Traditions after watching Mary’s Nest, I didn’t know that recipe was in there. Thank you for pointing out the page.

    I know this video is old, so I have no idea if you will even look at this video posts again…BUT, the yellow part of the cream cheese you had in the cheese cloth, would that not be BUTTER? Seems like since you had raw milk that some of the cream solids were still in the raw milk after the whey was drained. Maybe that cap on the bottom was actually butter and that is why your cream cheese was still holding moisture because you had the butter holding in the moisture.

      ⁠@@aliviastanley595this one is a little trickier. Also remember that homemade rarely tastes like store bought. This is one that is rather different.

      No unfortunately not. At room temperature it won’t ferment it will just spoil.

      This method of cream cheese only works for raw milk because raw milk ferments rather than spoils. But you can make cream cheese with pasteurized milk, just using a different method. With pasteurized you’ll have to use the heat method. Tons of recipes on the internet!

    Cream cheese is made with milk AND ADDED CREAM. This is just a soft farmers cheese.

      Hmm that’s interesting. I followed the recipe from Nourishing Traditions called “Whey and Cream Cheese” but I did think it ended up being pretty soft. Did I do it incorrectly and ended up with a soft farmers cheese? Or are you saying cream cheese is nothing more than a soft farmers cheese?

      Great question! I have a ton of it in my fridge right now. I use it in place of whey protein powder in my husband’s shakes. I also add it to any pasta dish, casserole, or soup I’m making again for that additional protein. It has a pretty neutral flavor with a TOUCH of like a cheese flavor. He can’t taste it in the shakes and it’s perfect for the other dishes I mentioned.

      I didn’t in this video but I have started to, yes. I’d rather use the cream for something else and the cream cheese is still great without it.

      I can’t remember. It’s been nearly a year. Now that we’re moving into fall soon I need to make another couple batches of bagels for the freezer and some more cream cheese.

    Can you explain to me why you don't end up with food poisoning after leaving the milk out on the counter for 5 days? I mean the actual science behind it. TY

      Yes this is a GREAT question!
      First of all, I want to point out that what I’m going to explain only happens in CLEAN raw milk! If raw milk becomes contaminated with bad bacteria it will spoil and not be suitable to consume. That’s why you need to be careful where you’re sourcing your raw milk.
      Raw milk contains living good bacteria. Store bought milk doesn’t because it’s killed in the pasteurization process. When the milk is left at room temperature the bacteria start converting the lactose in the milk to lactose acid. This is what causes the curdling. The curds separate and leave behind a liquid called whey. This is a natural fermentation process.
      The reason this occurs naturally and safely and has been consumed for thousands of years is because raw milk is alive! It has real, living bacteria to carry out these processes.

Sometimes you may have someone around you and not even realize it because they’re not advertising. Join one of those groups for your area and ask :) Good luck!
