Fun fact: Domino's Japan offers a crust option called the "triple millefeuille." You can get it with any pizza option, and it is 3 layers of ultra thin crust with a Camembert cheese sauce in between each layer. It is the heaviest, cheesiest thing I've ever had the pleasure of consuming.

Insider Info: Pizza Hut used their thin crust dough for this and did cut a circle in the middle. That permitted the bottom to vent and let the layers melt together to create a center seal. The top dough was also sealed to the outer edge with a roller. This created stable slices of pizza when cut and served. Without the center hole, everything just kind of flops around. This was a genius feat of pizza engineering. True story.

I worked at a Pizza Hut in '96/97. Triple deckers were made with their thin crust dough. The pepperoni pieces were thicker than slices, like the diced style that are on frozen pizzas. We never counted out 90 pieces, we just filled a spec cup and spread it over the cheese, which was considered one of the three "decks".
I worked there as well. I remember being taught to hang the crusts over the edge of the pan and using the roller to trim the edges and seal the crusts. The hole in the middle is 100% necessary.
In 2008 Burger King had a promotional Burger called the loaded steakhouse Burger. It had mashed potatoes on it. The fact that this existed is amazing and I think you guys should bring it back from the past.

I'm sorry you guys missed out on recreating what was a truly wonderful topping-forward experience. You should review all the comments from the late 90s Pizza Hut employees (like me) and recreate this correctly with thin crust. An authentic Triple Decker pizza would never be chewy. I actually think Josh could ABSOLUTELY teach a course on Flavour. How to taste food properly, how to combine various flavors, and how to make ingredients play off of one another in new and interesting ways- which is something a lot of chefs TRY to do, and then fail at miserably.
I used to work for Pizza Hut in high school and regarding the sauce and the oil in the dough, you're pretty spot on. :) We would get big bags of sauce paste and then had to cut them open and add them to a huge plastic bucket and mix it with water to make it spreadable. As for the dough, it came in frozen disks and we would have to prep the dough by squirting approximately a 1/3 of a cup of buttery oil into the pan, putting the disk in the pan, and then putting it into the fridge to proof for a day or so. The amount of oil used was disgusting. Everything was always covered in that greasy oil no matter how much you washed.
My sister actually made this for my birthday one year, only not exactly like they did in the video. it turned out Beautifully! the 1st deck had very gooey and stringy cheese, the top had pepperoni, beef, sausage and bacon with six cheese blend, and the crust was nice and crisp yet chewy. It also helped that she made her own sauce with a bunch of herbs and spices to really bring out the taste. If people can put in the extra ingredients, the variety of cheese, and the extra herbs and spices for the sauce, I guarantee that it would be a GREAT pizza.

I can tell you as someone who worked at Pizza Hut in the 1990s, the quartering of the pepperoni was a style choice for the commercial, we used 90 whole pepperoni. Also the hole was a real thing, as guessed, to vent steam. We had just switched to frozen dough from dough we mixed and rolled ourselves, but I can say your dough was WAY to thick and wet ( when we mixed it ourselves it was a much drier dough).

I forgot about the hole. It could easily be done at home with a biscuit or dounut cutter. I make mine without the hole and they come out just fine.

I ordered a Thin Crust Pepperoni Extra Cheese pizza once, and my favorite guy was working that day and he stacked pepperoni and cheese thrice and it was amazing.
No offense, but that sounds really gross. That much grease would make me sick.

Maybe it's called a triple decker because they count the bottom crust as the base of the pizza and above it is the three decks of 1. Pepperoni and cheese, 2. Crust, and 3. Pepperoni and cheese

I actually think Josh could ABSOLUTELY teach a course on Flavour. How to taste food properly, how to combine various flavors, and how to make ingredients play off of one another in new and interesting ways- which is something a lot of chefs TRY to do, and then fail at miserably.
I used to work for Pizza Hut in high school and regarding the sauce and the oil in the dough, you're pretty spot on. :) We would get big bags of sauce paste and then had to cut them open and add them to a huge plastic bucket and mix it with water to make it spreadable. As for the dough, it came in frozen disks and we would have to prep the dough by squirting approximately a 1/3 of a cup of buttery oil into the pan, putting the disk in the pan, and then putting it into the fridge to proof for a day or so. The amount of oil used was disgusting. Everything was always covered in that greasy oil no matter how much you washed.

My sister actually made this for my birthday one year, only not exactly like they did in the video. it turned out Beautifully! the 1st deck had very gooey and stringy cheese, the top had pepperoni, beef, sausage and bacon with six cheese blend, and the crust was nice and crisp yet chewy. It also helped that she made her own sauce with a bunch of herbs and spices to really bring out the taste.
If people can put in the extra ingredients, the variety of cheese, and the extra herbs and spices for the sauce, I guarantee that it would be a GREAT pizza.

I can tell you as someone who worked at Pizza Hut in the 1990s, the quartering of the pepperoni was a style choice for the commercial, we used 90 whole pepperoni. Also the hole was a real thing, as guessed, to vent steam.
We had just switched to frozen dough from dough we mixed and rolled ourselves, but I can say your dough was WAY to thick and wet ( when we mixed it ourselves it was a much drier dough).
This is the definition of i have nothing else better to do during a quarantine summer.
