Ep. 2 - Perfect Pan Pizza

  • RECIPE:
    1 cup (236 ml) warm water
    1 tsp (3g) active dry yeast
    1 tsp (4g) white sugar
    1 tsp (6g) kosher salt
    1.5 cups (180g) 00 bread flour (more added as necessary)
    Combine all ingredients, mix in more flour as needed, knead for a minute or two, cover with plastic and rise on the counter for several hours or several days in the fridge.
    After rising, give dough a final stretch and place in a parchment lined, oiled brownie pan, cover with plastic and let proof for 1 - 2 hours.
    Blend your choice of canned tomatoes, then add
    1.5 - 2 tsp (about 1g) each dried basil and oregano
    Pinch of sugar and salt
    Small glug of olive oil
    Use any mozzarella you can find made from whole milk
    After dough has proofed. spoon over a thin layer of sauce, top with cheese and any other toppings.
    Preheat oven to 500 degrees F, bake on lowest rack for 13 - 18 mins until golden brown to your liking.

    Cornmeal. Never thought of adding that to my pan pizza. Great idea. I love it in my Chicago deep dish dough.

    This looks amazing! I’m so excited to make this pizza! I love the clear directions you give. Makes it easy for for people like me who aren’t very good cooks lol This is by far my favorite cooking channel!

    Nice1! Gonna check IT out. Is there a moment when you can freeze the dough for later quicker usage?

      @m4verick109 Yes! After the dough has risen you can freeze and then once you're ready just let it thaw/proof for an hour or two.

    Perfect pan pizza. Dont, just don't.
    Order out and get good pizza if you can't make it. Life is too short to eat garbage.
