Love the effort I’m a generational butcher from Melbourne I buy carcas direct from abattoir most of the time it’s difficult to get information on the bread of the beef I buy we prefer heavy yearling age with weight from 230 to 270 carcas weight and also prefer marbling it gives me confidence to sell a steak even when fresh I no it will be tender if it’s marbled . I’d love if there were a broader range of breeders like your selves it would give us butchers better confidence with information when selling to a customer and off course the quality looks amazing
