Ngl I sometimes see videos of DJs twisting and turning dials at live performances, and half the time it really does feel like nothing but showmanship. I'm sure they're actually doing something, but it really doesn't look like that. Like ain't no way you have to twist this knob 20 times in less than a minute just to have your pre-recorded music playing.
They are live blending songs, which isn’t always easy when the bpm of each song is different. The knobs they’re turning are usually affecting the timing or effects like the hi-cut, reverb, etc..

After the initial mix DJ's pretend they're moving buttons for a reason but in reality it's just for show except when they're adding an effect or adjusting levels to the song which is only sometimes if any. What makes a great Dj is the mixing and their song selection.

Ableton looks great - it seems so much more straightforward to manipulate samples and automate effects but it is so dang expensive.
It's kinda astounding Fox Fox has 23 followers & a handful of SoundCloud tracks to just create the best 0:45 sec track that I wish was a full song on Spotify

A lot of dial turning has to do with tracks not currently being played but queued up on other channels.
