We regularly consume coconut milk. Mostly 3 days in a week. But we make it fresh from the coconuts and not the canned milk. So there are no preservatives in the milk or any of the nasty stuff. My wife adds raw cacao powder, stevia, cinnamon powder and Cardamom powder to it and it tastes like a chocolate milk shake. It helps us to keep our hunger away and it's also a good reward for having eaten our keto meals.
Coconut is brain food. Organic canned coconut milk: refrigerate overnight (at least), flipping the can sometimes makes it easier to separate cream (coffee, recipes, topping, whipped and you really do not need to add sweetener) and water (drink in place of sport drinks, the amount of carbs during or after exercise/work is not much concern or even extra energy to burn, vs sedentary).
The sugar content in coconut water is determined by the age of the fruit young coconuts have far less sugar than the fully ripe ones here in Barbados we use the young ones as a diuretic
I buy the coconut milk that’s in a can that’s organic from Native Forest and it’s BPA free. I use it when I’m making my mushroom, cacao or turmeric lattes. It’s delicious and so creamy.. I usually mix it with it with some filtered water when I’m making it…Thanks Dr. Berg!

My mom has been low in Potassium. Her doctor has her on Potassium 20 meq a day: I have been getting her to eat more avocados, nuts, and salmon but also having her drink a can of coconut water every day! Hoping her potassium numbers improve!! Anyone have any other suggestions to get her potassium up?
That is what I do. If you cannot get fresh coconut to use for grating, buy desiccated coconut in packages (ideally with little to no additives/preservatives). In an ideal situation, they would be sun or oven dried/desiccated. Soak with hot (but not quite boiling water) with a ratio of 4 cups of water to 1 cup of desiccated coconut. Soak it for at least 1 - 4 hours. Pour into a blender and blend it. Run it through a cheese cloth or something similar and squeeze only the liquid into a pitcher or bowl for putting into a bottle or container to pour from. I do this and add it to my coffee daily. Have to blend every 3 - 4 days or so. I live in a tropical country, so coconuts are abundant.

A month ago I went to the website to learn more about keto, and when I saw No "coconut water", I thought: no way I'm giving that up! Now I see this, oh well. I don't really know what you call coconut water. In my country we don't even say "agua de coco" for what we drink, "agua de pipa". Pipa is green in the outside and the food inside is very soft and not yet super white. What we drink is almost like water in color, straight from the nut or just bottled at your very eyes. Very refreshing and just a little sweet, and definetly not tasting as coconut. But we do use (brown) coconut's milk and "food" for many recipes, like coconut rice and cocadas.
