      For me, it was really about the texture as much as the flavor. Though I played it down in the video there is a slight choking hazard if you try to inhale it the way that I did. So eat with caution! There is also a dedicated store down in Kaohsiung which specializes in dragon's beard. So I think we will be making the trip there to check it out and perhaps even make another video. ~JB

    The night market is a foodie adventure! I want to try the beard candy. Looks like a lot of fun. Scallion pancakes are my favorite. I’ve never had stinky tofu. I know it’s a must try. Thanks for sharing your foodie adventure!

      You can find the same dishes at most night markets. But Sunday is great at finding the best version of that dish at various markets. She has a market for taro balls, she has another market for scallion pancakes etc etc

      It was! This is the night market version. There appears to be a store and a neighboring town that really specializes in this traditional treat. Hopefully we will take a visit and make a video for that as well.

      Didn't make too much of a point in the video, but I will advise that it is a choking hazard if you breathe in the cotton candy too quickly. 😆😁~JB

    The "杏仁荼" is probably made from apricot kernel, not almond. Almond milk doesn’t’ have the distinctive aroma. There are several mistakes about food name translation in Taiwan. Almond / apricot is one of them. The other common mistakes are lemon / lime, orange / tangerine.

      Thank you for the comment. We love learning new things from making these videos. Certainly, the origins of amaretto are Italian and they do use a variety of sources. There's one particular chemical that is present within almond and apricot seeds and another pit fruit that I can't think of at the moment. However, we have gotten almond tea here in Taiwan that literally has shaved almonds in it. That's not to say that it wasn't made from the apricot seed with almonds added, but it had that same aroma for sure and it was actually a little better tasting than the one we tried here. Sunday is always great at giving us the best versions of Taiwanese food. We think we found great beef noodles. She always shows us a place that is better. We think that we found great milk fish. She shares a place that is even better! She is a foodie but she doesn't act like one. Lol

      @@Justin_Leah Apricot kernels can have lethal amounts of cyanide. I figured this out when trying to discover an odd "almonds that were not almonds" that I bought at Trader Joe's. I discovered they were apricot kernels and then read that they can have toxic levels of cyanide. But, like, only the "bitter kernels" (Thanks wikipedia). I don't know if this means they are fine if you know how to pick and cultivate them properly?? My partner and I ate those apricot kernels and lived to tell the tale.

      Something you should know about Taiwanese now, they love to line up in a queue. We're not convinced that the cue is at all reasonable the indicator for good food that everyone suggests that it is. Although, the few times we've waited in a queue, we have enjoyed ourselves.

    Yum!! Oh man, if we were over there we'd be eating all the food all day every day! Really interesting seeing how that bearded dragon was made. We've never seen anything like that before

      I nearly choked on it! This was the night market street food version of the dish. I'm looking forward to going to a dedicated shop to see how they make it. Hopefully that'll be another video. I was surprised that or friend Sunday didn't like it. Lol
