I’m glad Demeyere released the Silver 7 line. It has the handle shape and helper handle shape of the more functional Industry line but the finish and build quality of the Atlantis. I definitely prefer the functional big rectangular handles as well as the straighter (not French style) handles on the Silver 7 and Industry than on the Atlantis/Proline. I also prefer the slightly curved bottom edges.

Yes. The base of the Silver 7 is exactly the same as the Atlantis, so they will cook and perform exactly the same. The Silver 7 is just another redesigned Atlantis.
I recently purchased a Zwilling Passion cookset. Flat metal lids, aluminum core disc, welded handles. Seems to have lots of desirable qualities at a fraction of the price of Atlantis (much less mass I would guess). I can't find the base thickness anywhere online. Seems like a very nicely made budget option? Would you consider a review?
If I can get a few pieces at a reasonable price (most likely second hand) then I'll review them. So far I haven't been able to get my hands on any yet unfortunately.
The one major flaw in all Demeyere that I've seen is the lid fit. No excuse for it. I much prefer my Fisslers for things that need to be lidded. Excellent lid performance.
My Demeyere SS lids fit so well that if I let hot liquid cool with the lid still on, It can be difficult to pull off due to vapor lock. That's how well it seals.

It would be good if you can go to a shop and check them out physically in person. Both sizes are bigger than you think. The 28cm model is almost as big as a 32cm model from other manufacturers.

You have to buy a separate flat lid. Or use the lid from another 28cm Profi stockpot. I’d love to buy a Demeyere version because the Demeyere is a good compromise between heat distribution and speed of heating. The Fissler takes a bit longer to heat up. I’m with MQ Daily…. I’d much rather have a 2-handled rondeau style pan than the sauté pan just because of oven fit and handling.

Speaking of which, is it possible to use the falk copper pan directly onto the induction hob?
No copper won't work with induction, unless it's got a SS base. De Buyer makes such a pan, but I wouldn't recommend it.

The Lid fit has been addressed with the newer lids on the Silver7 line. I also am a fan of the Fissler Profi lid fit.

Very good video. Thank you. Should you want a disc bottom just get a Fissler. More mass in bottom, a lot cheaper, no history of handles getting loose.
Fisslers are not cheap anymore! Also they don't seem to sell the Rondeaus with the flat lids anymore.

You might want to look for the "Multifunction 7" series

Any chance of testing a wok from demeyere?
If I can pick up a 2nd hand one then I will test it. It won't be ideal though as I have an electric flat-top.
