We use thinly sliced pork belly for our shogayaki with plenty of onions, so good over rice and cabbage! Why do meats dripping in sauce taste so good with cabbage?

Dumb question as I am not really much of a cook. I can't find sliced pork in shops around me. If I go to the butch area of the store, what is the cut I should ask for? I'm trying to learn to cook but I don't know a lot yet.
I think I might make this.... But I might elevate it a bit by doubling the amount of marinade, using half of it for marinade and the other half as sauce - maybe I'd thicken it a little with some starch. And I might add a squirt of fresh lemon juice to the "salad". Or add chopped mint!
Great recipe, a little advice regarding the frame rate of the video I think it's not set properly I feel the movement is very fast, I'm not that experienced but I think it's higher than 30 FPS
