THE BEST HOMEMADE CHICKEN POT PIE (FROM SCRATCH!!)

About 3ish cups of shredded Rotisserie chicken
1 medium potato (cut to small cubes)
1 stick of butter
1/2 cup of plain flour
1/2 cup Mushrooms
1 Yellow onion
1 1/2 cup of frozen peas and carrots
2 tbs Minced Garlic
2 cups Chicken broth
1 cup Heavy whipping cream
Season salt (to taste)
Adobo seasoning (to taste)
Pepper (to taste)
Perfect seasoning (this is mixed herbs) (to taste)
9 in pie pan
PIE CRUST INGRIDENTS
1 cup flour
1/3 cup of vegetable shortening
1/4 tsp salt
Cold water (add in 1tsp increments)
Repeat recipe for top crust.
