- Perfect idea to take a break from eating meat! Today we make an easy recipe with simple ingredients for chickpeas with eggplant in the oven and then we have one of the healthiest main courses!

RECIPES:
Ingredients
500 g chickpeas
1 tbsp of soda
2 eggplants
Salt
1 onion
2 cloves of garlic
Olive oil
3-4 tomatoes
Salt Pepper
Method
First, put the chickpeas in enough water together with the soda and leave them for 12 hours. Then, rinse them well and boil them on medium heat until they soften.
Also, clean the eggplants, cut them into slices and leave them for 1 hour in salted water.
Fry the chopped onion and the chopped garlic. Add the chopped tomatoes, salt, pepper and cook until the sauce thickens.
Then, drain the eggplants well and fry them. When they get colored, take them out on absorbent paper.
Place the chickpeas in a pan, spread the sauce and place the eggplants on top.
Finally, bake at 180 degrees Celsius, until our food is honeyed.
