Because 90% of winch chun schools dont really understand how to apply it. This is due to to a lack of gorr sau ( sparing). WC is really a very free style system. Students confuse training stances and drills with application. There really is no definitive fighting stance. WC is a self defence system. in self defence you react to the situation, there is not usally time to stand in a pose. There is a basic training stance, but it is more for conditioning etc. when free sparring the stance and gaurd looks more like that of traditional bare knuckle fighting.
Wing chun was combimed by ancient Chinese monks those were the original MMA wing chun footwork is actually a drill and a learning exercise its up to the practioner to use whatever footwork he likes I personally use traditional muay thai stance and ive used many wing chun blocks and attacks in sparring
