If memory serves me correctly, I believe this is the favorite dish of Lady Ningguang from Genshin Impact. “A slow-boiled soup of leftover chicken and pork bones drenched over some cabbage leaves. I have few culinary requirements. Having a few staple dishes like this is enough.” Sounds like you would make her very happy with this dish And me as well of course, as it does look tasty. 😊

开水白菜
1、1个带皮猪肘(800g)对半切开。
2、1只老母鸡(800g)和1只老母鸭(800g)分别对半切开,去头掏空内脏,剔除多余脂肪洗净。各取下两侧的鸡胸肉和鸭胸肉,备用。
3、1块金华火腿(150g)冷水浸泡40分钟,洗掉多余盐分,备用。
4、1根大葱切段,1个生姜拍扁,备用。
5、猪肘+老鸡+老鸭+金华火腿焯水,煮滚捞出,温水冲洗掉附着的浮沫。
6、取一口深锅,底部垫竹网,加入焯过水的食材+6颗干贝+大葱段+生姜+7200ml水。大火烧开后转小火炖煮4小时。
*炖煮期间需要不停打捞油脂和浮沫。
7、4小时候后将炖汤原料捞出,纱布过滤汤中残留肉渣,将汤冷却到60度以下,备用。
8、准备50g鸡胸肉+50g鸭胸肉+50g猪里脊,去除多余脂肪和皮,各切成小块,备用。
9、准备扫汤原料:
50g鸡胸肉+80g清水+20g冰块,用破壁机打30秒,打成鸡肉糜。
50g鸭胸肉+80g清水+20g冰块,方法同上。
50g猪里脊+80g清水+20g冰块,方法同上。
打好的肉糜分别放置于三个碗中,备用。
*扫汤即烹饪中处理高汤的一道步骤。一般包括:
去锅面浮油、制汤扫(肉类原料制成泥蓉状)、汤扫重复倒入汤中搅匀煮沸、捞出、直至捞净、反复过滤汤直至汤清。
10、冷却的汤(1000g)以鸭胸肉、猪里脊、鸡胸肉的顺序进行3次扫汤。扫汤时全程保持小火,汤勺不停搅拌防止糊底。每次扫汤后都用纱布过滤汤汁1次,去除汤中杂质。再将过滤的汤冷却到60度后,重复以上动作。
*剩余未扫的汤可以冷冻起来,作高汤使用。
11、白菜对半切开,根部放入锅中煮10分钟,浸入冰水中冷却备用。
12、将煮熟的白菜展开,依次将叶片修剪成莲花形状。
13、修剪好的白菜在扫过的清汤中煮2分钟,捞出后收拢成花苞状,花苞中心放一颗枸杞。
14、用热汤浇开花苞,呈盛开的莲花状即可。

论清水白菜这个高汤~~~就像刘姥姥进大观园时候吃茄鲞的时候说的话 “我的佛祖 倒得是十来只鸡来配它 怪到这个味……” 这样吊的汤 他不鲜才怪~~~平时煮鸡胸肉的汤放点盐都鲜的一塌糊涂 更何况这么吊的又拿肉泥砸~~~这个菜卖的价钱不是盘子里装的 而是垃圾桶里扔了的!!
