Wow, this recipe came out so delicious...as if it were from a Chinese restaurant. Cake noodle is my favorite item to order, but now I will make it instead. The bouillon powder that I used to make the stock, though, made the dish a little too salty for my taste so next time I will reduce it. I should've tasted the sauce and adjusted accordingly. I didn't have chow mein noodles nor beef so I used dry, packaged ramen noodles and pork instead. I also added spinach to the vegetable mix because that's what I had on hand. This recipe is a keeper. Thanks so much for sharing your knowledge. Every time I cook a recipe from you, my family is so impressed!

You may have to search a bit because there are some alternatives to the high salt bouillon. First, here is a paste called "Better Than Bouillon" and comes in a jar. The other is Herb Ox Sodium Free Chicken Bouillon.
use the liquid broth like mushroom or beef or chicken (you can substitute chicken instead of beef, just cook it till done) instead of bouillon that has a lot of salt in it.. there is plenty of salt in the soya sauce and oyster sauce.. plus. i love more sauce! lol

There are so many type of noodle on the market. Rule of thumb...1) .bone dried type-noodle-- boil for 3 minutes. 2) semi dried noodle-- soak warm water for 30 minutes. 3) soft pre boiled & oiled noodle --- boil one minute, or can be use without boiling, since they are already boiled in the factory. I have two cast iron skillets that belonged to my grandmother. They have been in use for over a hundred years.

I am always confused as to how to cook all the different noodles. These same noodles I precook in boiling water for a couple of minutes before adding to a lo mein dish, but just putting them in warm water cooks them enough to be fried? I always get fresh noodles from the Asian market.
I just watched your beef lo mein video and you didn't boil the yellow lo mein noodles again. So am I not supposed to be boiling these yellow thin noodles before adding to the rest of the ingredients? When I asked at the store, they told me to cook them for a few minutes in boiling water. So confused! LOL
Those soft oily yellow noodle are already cooked boiled and oiled to prevent them from sticking one another. Usually they are packed in a sealed plastic bags. Before long, guys who look like me will be cooking and in Chinese restaurants. 😎😂 I understand that second and third generation people have more choices and the restaurant just doesn't appeal to them. Same is true for many family stores. I have cooked western menus for thirty years, partly because I love cooking and baking. And one must pay the rent and clothe the kids. My son is too educated for such things. I suspect he thinks the old man is a dummy. I hope he marries a woman who refuses to cook.🤐😋 However, nurses work harder longer hours than restaurant workers.

He is using Shaoxing Rice Wine. I believe a good substitute for that particular rice wine would be to use a dry sherry in its place.

HAPPY WOK cooking is hard hot work, when cooking for many. It is sad to see such skills being lost. Before long, guys who look like me will be cooking and in Chinese restaurants. 😎😂
I understand that second and third generation people have more choices and the restaurant just doesn't appeal to them. Same is true for many family stores.
I have cooked western menus for thirty years, partly because I love cooking and baking. And one must pay the rent and clothe the kids. My son is too educated for such things. I suspect he thinks the old man is a dummy. I hope he marries a woman who refuses to cook.🤐😋
However, nurses work harder longer hours than restaurant workers.
