  • This is part two of the most comprehensive review I've ever done. In this part, I review the last few tortilla and then take a "baseline" reading to see what happens to my glucose if I eat a "real" tortilla. There are some pretty surprising results in this video.

    I had the privilege of working with a very gifted nutritionist for a few years, a few years back. Her take on net carbs was to only subtract the fiber that occurred naturally in the food; for example: subtract the fiber in an apple when eating a whole apple but ignore the fiber in the psyllium husks when eating a "psyllium husk coated Oreo Cookie."
    Three years of testing has validated her approach. "Added fiber" ALMOST NEVER fools my meter.

      THIS is exactly right. I'll post more seperately to ensure to get Steve's eye, but the only time it makes sense to subtract fiber is when the fiber occurs within the carb-laden food. Adding exogenous carbs to pump up fiber levels does NOT reduce the core carb levels of the food with the carbs! More to come in my seperate post.

      This is exactly what I’ve been doing! If there’s no natural fiber in a keto product I’m looking to buy, I will not purchase it.

      1 tbs psyllium husk has 4 grams of carbs and 3.5 grams of fiber so the 3.5 grams would actually subtracted from the psyllium husk and not the Oreo cookie.

    This supports my theory that eating what I call Frankenfoods kicks me out of ketosis and triggers cravings. I do much better and feel much better when sticking to Whole Foods and using lettuce as a wrap. Thanks for doing these tests as I don’t check my blood sugar.

    Dang. Broke my heart. I see those mission tortillas everywhere. Now I am really broken. I was shocked at the readings. How they almost mirrored the street tacos. Going to have to do some serious thinking on my next steps. I am a low carb kid not a real Keto. But as a type 2 diabetic I always try not to go too nuts with the glucose spikes.

    I like your 90 second tortilla. I have type 2 diabetes, am not on drugs so I depend on a fairly strict keto diet. Have lost weight and feel good. I generally find something I like and use it to the exclusion of store bought items. Thank you for all you do.

    Steve, thanks so much for doing this. I was surprised at some of the results too. I’ve been using Egglife for a while now and just yesterday used it as a pasta replacement in my lasagna. It was delish!!! Expensive? Nope, cheap when I consider the NO-cost to my health!

    Yeoman’s work, Steve! The “keto”label is the new “low fat” label. Popular, but means nothing and does not take food quality into account. If I’m going to burn 20g carbs on a tortilla I’ll make my own! It’s about 100x more tasty and I can make it with olive or avocado oil and no sugar. Thanks for your work it is so helpful!

    Hey Steve, upgraded my membership level as a result of all your help during the tortilla series since sometimes saying thank you doesn't seem quite enough. Great job. After you do one of these I find myself getting more aggravated that my GP will not prescribe a continuous glucose monitor for me! I've read all over the Internet about how much trouble us type 2 diabetics have trying to get what is considered something only type ones need. I'm so sick of poking myself so many times, LOL, although I have learned a lot. I told my doctor that I burned through so many test strips I can't retire! This is why I really appreciate you going through these things. Not that our glucose levels will be the same but just seeing how you're able to get the results makes me press forward until the day comes that I will be allowed to buy my own CGM! With your help I've gone from 7.6 to 6.3

      Explain to your doctor that all you want is the prescription for the CGM and that you are willing to pay for it out-of-pocket, if required. Have him note in your chart that you requested the monitor and he refused it. That usually gets them to go ahead and prescribe one for you.

      You are very welcome! If you are clinically diagnosed with type 2 diabetes, I think your medical insurance will cover a CGM. Your doctor may be refusing to help you with this because he/she doesn’t know how to use it in conjunction with a proper human (very low carb) diet.

      @@lisae1032 Yep, that's what I did too. My plan was to pay out of pocket for 3 months' worth just to get a sense of my reaction to specific foods. I ended up finding it very motivating so I've kept it up. It is expensive and honestly our insurance is stupid for not supporting us to stay motivated. But it is what it is.

      I am a type 2 and am on Medicare. Medicare will not pay for a CGM. My doctor did give me a prescription but I pay out of pocket. Needless to say, I use one infrequently. It gives good info but mainly for trends. The Levels software that Steve uses is SO much better than the Freestyle Libre itself. Good luck on your quest.

    Thanks Steve, the Mission results are disappointing but pretty much expected. It looks like I'll probably settle for using the La Banderita or Ole Xtreme from the last video if I am not in the mood for Egglife wraps. Thanks for the commentary at the end. It pretty much reaffirms my thought that modified wheat flour is probably just a farse and really isn't terribly different than regular wheat flour in our bodies.

      I love the Ole Xtreme....and will use the Egglife for "pasta" that was a wonderful suggestion....I live in Texas and I'm NOT giving up tortillas

      Carb balance doesn't spike me, you might want to give them a shot and see how it is for you.

    Most of the ‘low carb’ are basically flour tortillas. I love the Egglife because there’s no sketchy ingredients and can be used for so many things.

    Hmm...I've noticed that tortillas made w/lard do not spike the same as vegetable shortening/oil. This is based on years past~pre-keto, but "low carb" & tracking husband's blood sugar~as he was diagnosed "pre-diabetic" ten yrs ago. They also did not cause nearly the inflammation
    We only count total carbs now for obvious reasons- cannot trust pre-packaged #'s, nor that a body will respond the same as any other, or even the same twice. Since looking at total carbs only, we have further honed both our grocery bill & the consistency of our GKI numbers. Definitely the way to go for us.=)

    Yay! La Banderita happens to be the kind I use. Rarely do I discover I've made the right choice when there are so many options so I'm a bit tickled. Thank you so much. I rarely ever eat anything like that but it's good to know it's a safe choice. Thanks for being our human guinea pig once again. (Loved the shirt series.) I really like the idea of cutting the Egglife Wraps into strips for soups or things of that nature.

    Thank you! I am what Dr. Sten Ekberg calls "carbohydrate intolerant." I am very strict with carbs. I am so happy to learn about Egg Life. They are on my list of things to try. The rest, tho I grew up on Mexican food, I will have to leave behind. It's not worth the price of weight gain, insulin spikes, and inflammation.

    Theres a few more tortillas! Part 3 can be these: A la Madre low carb corn tortillas, Tia Lupe Corn/Cactus Tortillas, Tortilla Plug Beet/Corn tortillas, Tortilla Plug's nopal/corn tortilla... They all have pretty much clean ingredients...theres also, the Mr. Tortilla brand they make several, but use canola oil.

    One of your best series yet! Thank you so much for the investment of time and money to show us the evils of these "keto" foods. We love using La Banderita Carb Counters for that "authentic" taste but still being somewhat keto. I'm glad they are readily available at our local Kroger here in Michigan. Thanks again Steve!

    One of the keto RUclipsrs that's a doctor (don't remember which one) says you should count total carbs on processed foods. I think your test shows why!
    I use egglife to make enchiladas. As long as your filling is seasoned well, I think they taste great. I get the texture of a tortilla without the carbs. I wish there was one with corn flavor though.

    LA Banderita keto tortillas are the best option if you are going to do dirty keto. Eating those puts you miles ahead if your willpower breaks and you go binge on something else because you couldnt have a taco on family taco night.

    Honestly I think my results on KETO initially were so successful because no processed goods were available & we were forced to cook from scratch, which I sincerely believe is healthier no matter what "diet" one is on. Once the big food companies begin developing "KETO" products they find ways around the "rules". They do this with all products, not just KETO. Look at Greek Yogurt, once it became popular every yogurt company made some version, but if you look at the ingredients they've added pectin to thicken instead of straining etc... it's unfortunate, but honestly making foods from scratch is the better way to go, that's why your recipe development is greatly appreciated, at least by me...

      I think Keto foods have become a gimmick food companies can charge extra for and why I stopped buying these products. Sometimes the portions they suggest can be misleading and who uses those minute portions they suggest?

    There are so many reasons this was appreciated. Just so you know...
    One reason is the $ you've saved thousands of households for as long as utube lasts, from having to purchase and toss out, every product you test.
    Reason two is the $ and bad reactions saved by those who do not own a glucose tester.
    The third reason is, for providing a safe place to refer clients we have taught for 35 plus years, not necessarily Keto, but low carb/anti inflammatory, auto immune deficient, no symptom treating, life style change diets to. Whew that was a mouthful and what a relief. You're showing not only proof, but if you react with inflammation, you relay that too. So from you, it's a 2 for 1.
    #4, not everyone cooks from scratch, and those of us who do, we sometimes run into fast food needing emergencies, and travel time and you help with safe foods.
    Just so you know, the number you have helped is way above 1, just today, alone.
    Last but not least, from somebody who has created recipes since before the internet, and rotating menu plans just to let people know how much they DO get to eat, yet doesn't want a you tube, thank you again!

    Your testing of low-carb tortilla products is very much appreciated. I know that it takes quite some time to go through all the testing. I had mentioned this in another video, but I have the same problem with the FreeStyle Libre CGM. Likewise, I have had at least 6 bad sensors over the past year, and Abbott has replaced all of them. I record the differences between the sensor and finger sticks and provide them with that data.
