Yes, I agree a smaller pan would have helped you and the egg would have "behaved" better. Tips: 1) Clean the previous egg out of the pan so that the next batch has nothing to stick to. 2) Add more oil/butter/margarine since that pan was not a nonstick one or use a nonstick pan. 3) Try using more egg mixture since it was a bigger pan. 4) You can also cook the egg mixture separately and place it on top of the already oval, formed & plated rice. Then tuck it in. 5) You can also form the rice in your hand then place into the egg mixture for a more even distribution, look & tuck. 6) Think fluffy, yet thin omelet. When you place the egg mixture in the pan spread it evenly around. Let it slightly cook. Then push the edges (cross/X shape), one at a time, halfway to the center and let the still uncooked/running egg fill back up the empty space from each push. This creates the fluffy yogurt like appearance. Anyways you still did good. It's all about the flavor in the end.

The timing when it seems the best to make it stick, to shape it etc.

Well the real reason why we cry when chopping onions not because of the smell but when we cut the onions they release sulfur gas and when it gets to your eyes it creates an acid which irritates the eyes .

I'm sure people have already said it, but if you refrigerate the onion overnight you won't tear up=)
here is a tip when cutting onions, try to leave it in the fridge 10-15 minutes before you cut them and try cutting it, if not, cut it under water

onion release a gas that when it hit human eyes it automatically makes them cry for protection. you can also use a candle which attracts the gas away.
