I worked aboard a commercial fishing vessel in the Caribbean as a 1st Mate, and the captain would give us a rum ration -often in the form of grog- daily; when you went above and beyond, he'd recognize your efforts by giving you a glass of grog WITH ICE! And believe me, you'd appreciate that ice in that tropical heat... What they were trying to recreate was the flavor that rum picked up from being aged in barrels on a tall ship at sea for maybe 3+ would pick up; the salt from the ocean spray on the deck, the spice (nutmeg, cinnamon, etc) from the ship transporting it back from the islands...

Heck, I was once even stopped at a roadblock and had my car searched for moonshine (it was all back at the hotel - not in my car).
