Deer Backstrap and Johnny Cakes Over a Campfire

  • Deer backstop and Johnny cakes (corn bread) cooked over a campfire were two trail foods that Daniel Boone reportedly ate as he trekked west in 1779. One of his fellow trekkers was Peter Houston, then 18 years old, who remembered and wrote about the trip and the life of ole D. Boone. In this video, I take the kids out for a little trek and replicate one of the meals. Deer meat and Johnny Cakes are the focus of this one and I tried to replicate his cap description and fire making description. I hope you enjoy.

    Great video. At least once a year I build a campfire in my yard and cook Johnny cakes and venison this way.
    Been doing this for decades. One of my favorite time travel experiences.

      Yes! With the occasional exception of scrambled eggs. Sometimes the ash and pan scrapings from last nights dinner are too much.

      Made something similar but had bacon. Fried it up then fried the cakes in the grease. Delicious....need to find some more dry cured bacon though...

    It's wonderful that you can get your kids involved. I'm sure they will have a better understanding of history as a result, not to mention the family time.

    You never disappoint, Anthony. Your reference to salt and it being a luxury really puts our modern world in perspective. Heck, a modern store has a thousand different hair products. Always a treat to see your beautiful family!

    I live in south Georgia, and my grandmother's family, the Keenes, crossed over the Cumberland Gap with Daniel Boone ... They apparently a charter giving them permission to start the settlement of Keenesland, Kentucky, which the property later became the name of the famous horse race!!

    Good video. The "johnny cake" you show is quite close to what is known as "hot water cornbread". It was made only with corn meal, salt, and maybe some sugar. Cooked in a pan with the drippings from bacon or fatback/Salt pork. If you have not done so I also recommend the writings of George Sears aka "nessmuck" for other cooking ideas...

    Great video. What your showing is the food Travelers and hunters in the time period ate. The best way I have cooked the corn cakes is to put some flat stones in your fire pit and build your fire get rock hot put ashes from fire over rocks place cakes on ashes and put more ashes on top cakes and bake. Cakes will be done this way. I love another documentation of using char cloth to make a fire. Great stuff.

    I like the video however to add to it's depth I think an actual hunting video to show how the venison was acquired would be nice. There is one 18th century themed channel where the host actually hunts with a muzzleloader. There are so many longhunter themed living history channels that show cooking, fire starting, etc. but don't actually seem to trust their equipment for the real thing. I think that would be as authentic as possible.

    Johnny cakes should have been reflector baked in front of a large softwood flame whereas the venison broiled over coals.
