Thank you so much for this! I tried this method in 2020, I had 9 lbs of Elderberries! I added 16 lbs of sugar I think. In 2021 I could have hugged you! It was excellent wine I was so chuffed, my first wine ever and 3 gallons of it! It didn't last long... Lol I love the simple method, for us newbies, it's good to start simple. Stopped making wine a long time ago... Time to start again just picked loads of elderberrys.... Off to wilko now! Did make some vodka about 5 years ago but I'm not sure it's drinkable after that long?
Cool, I am just finishing a batch of Ginger wine at the moment, already for bottling, and I can see copious amounts of elderberries this year. So I am looking forward to making some elderberry wine now.. :o)
Hi their thanks so much for the vid just wondering if could top my demi John up with actual red wine its self from the loss of re racking ?? Coming up to month 3 and didnt want weaken the wine from doin so with water. Planning on leaving it for 12 months minimum from what uve said what do you think? Thanks in advance xx
Hi Mark, yes I don't think that would be a problem, it will probably enhance the flavour and strength. You definitely need to leave it 12 month, believe me it will be worth the wait. Cheers and Happy Christmas. Graham
Hi Andrew Rushmer I have been making wine for a few years I prefer to let the berries steep for about a week then I strain the juce, then I add the yeast , I found adding the Berry's when the yeast was in I found it upset the yeast quite a bit and found in difficult to get the yeast going again,you were saying trying more sugar I would try a hydrometer to check the gravety first if it is higher then 1025 say I wouldn't accept more sugar hope that is some help Sandy
Hello Graham, I used 1 pound of sugar and the fermenting stopped 24 hours after straining the liquid into the demijohn from the bucket - is it worth adding more sugar? Or any other suggestion , thanks!
Hi Andrew, are you keeping the demijohn in a warm place? It needs to be kept slightly above room temperature to keep the ferment going. Try putting it somewhere warm and maybe give it a good shake to start it off again, you could also try more sugar but if it's only been going a day I doubt if the yeast has used all the sugar.
Thank you ever so much Graham you are a genius! I gave it a good shake and sat the demijohn on top of our dog's heat pad and the airlock has now been bubbling steadily all day! I'm delighted! If we lived near each other I'd bring you some round to try next summer!! I noticed you get great results without the need for a campden tablet - is that always the case? Thanks again! :)
Great stuff, glad you got it started again, I hope you enjoy your wine, give it plenty of time to mature it'll be worth it, this time next year you'll be enjoying it if you are patient enough. I didn't use a campden tablet on this occasion I probably didn't have any but if you've got some I would pop a crushed one in at the end of the ferment to help it stop. Good luck.

Followed this recipe in fall 2021 and waited a year before trying, tastes like a good table wine, i made mine dry, 1 and 1/2 pounds of sugar

So if you wait a year to add the sugar does the yeast wake back up?
Not in my experience.
But absolutely in mine, is you've kept the yeast cold.
Don't people realize plants have different harvesting times depending where you are? Here in Florida my elderberries are ripe now in July.
