The only thing you should of added at the end of the video was going to colors -> map -> rotate colors, to show folks that they can change the color of the hair on the fly. But great job!
Like at 1:58? Thats the 'blending mode". At 1:40 she use "multiply", you can see at right side of the screen, and at 1:58 its "normal". I believe, she use "multiply" to see better where the hairs are.
On the base layer (your original photo) select the hair either using the color select tool or fuzzy select. Then switch to the color layer and use the paint bucket on the selection. When you apply the mask to your color layer make sure you choose the radio button titled 'Selection' before hitting okay. That will mean that the layer - and it's changes - are limited to the area you selected on the base photo. Then you can paint all over the canvas as she does but it won't alter the pixels on the face or other areas when you select the blending mode for the layer.

is this possible for white hair?
Yes it is. Instead of LCh hue/HSV hue go for LCh color/HSV color. Color looks a bit fake, but you have something to compare.
Can't find blending mode option
