I have a question...can we make it with the small 'arrouille' we usually make curry with? I live abroad and i don't know how violet is called in english and where to find it.
I tried this today but sadly my arouille mixture became very wet, it was too hard to make a ball. I think I needed to squeeze out the water after grating?
When you mix, the taro will release some water, based on the amount of water released, adjust with tapioca starch (to hold together)just for you to be able to make the balls. The mixture should neither be wet or dry.. if you put too much of tapioca, they will turn out hard and if not enough the balls will break apart while frying 😊
