You should check out the Issaquah Costco, they have a much larger sushi and sashimi selection.

you should hit up the deli at warehouse 110 in Issaquah, they have a huge selection of in house Sushi they've been fine tuning for the last year or so
Go to the one in Covington Costco. They have the test sushi section similar to the butcher area. And they get a lot of test items!
